Apple Kheer is a delicious milk based dessert made with grated apples , chopped dry fruits and thick evaporated milk. It is a welcome change from the traditional kheer recipes. Here grated apple and chopped dry fruits are tossed in ghee till the apple is semi dry. It is then added to the cooled kheer with a sprinkling of cardamom powder and chilled before serving.This healthy dessert is perfect for special occasions like Raksha Bandhan or any other festivals and best relished chilled.

Cooking instructions
* Step 1
Boil milk in a pan.When it starts boiling reduce heat to low to medium flame and cook until milk is evaporated to half.Mix powder milk with 2-3 tbsp hot milk and dilute it in boiling milk.Add sugar as needed and stir at intervals to prevent sticking underneath. Make a slurry of 1/2 tsp cornflour and add in the milk.Boil till kheer is dense and almost thick.Sprinkle cardamom powder and give it a gentle mix.Remove from flame and cool.
* Step 2
Peel and grate apples.Heat ghee in a pan and stir fry the grated apples till the moisture disappears and the apples are cooked and almost dry.Add chopped almonds,cashewnuts and raisins while frying the apples.Set aside in a bowl to cool.
* Step 3
Add the cooked apple and dry fruits to the cooled kheer or evaporated thick milk.Mix well. Make sure both apple and kheer are at room temperature before mixing.Otherwise there are chances that milk may curdle.Chill apple kheer for at least an hour before serving. Garnish with some more chopped nuts and serve a delicious aftermeal dessert on special occasions and enjoy !
