Radhuni Rui or rohu fish cooked with radhuni ( wild celery seeds) paste is a flavourful traditional Bengali recipe. Radhuni seed has a very distinct and aromatic flavor and resembles almost like ajwain /carom seeds. This dish is best served with plain steamed rice in lunch or dinner.

Cooking instructions
* Step 1
Marinate fish with 1/2 tsp salt and 1/4 th tsp turmeric for 10 minutes. Meanwhile lightly dry roast the celery seeds and dry grind. Add 1 tbsp chopped coriander,1 green chili to the ground radhuni powder. Add 2-3 tbsp water and grind to a smooth paste. Make a paste of onion and ginger garlic paste.
* Step 2
Parboil sliced potato. Heat mustard oil and fry the marinated fish till golden brown. Also, fry the potato and set it aside. In the remaining oil, sprinkle minced garlic and fry till light brown. Add celery and cumin seeds for tempering.
* Step 3
When the tempering splutters, add the onion,ginger-garlic paste. Also add turmeric, red chili powder, tomato puree, salt, and a pinch of sugar to taste. Fry till oil leaves sides. Add the fish, slit green chilies, and potato, and toss. Add 2 cups water and boil till fish and potatoes are done. Add radhuni paste and boil. Adjust gravy according to need.
* Step 4
Boil a few minutes till the gravy is thick.Sprinkle garam masala and toss.Serve hot for lunch or dinner with steamed rice.
