Methi Begun Bhaja or Fenugreek Brinjal Sabzi

Fenugreek leaves cooked with Brinjal give an unique flavour to this healthy and nutritious dish.Fenugreek leaves is a winter vegetable and has many health benefits. This recipe is a traditional Bengali side dish which can be made easily and pairs very well with rice and dal or roti and paratha.

Cooking instructions
* Step 1
Cut brinjal into 1 inch cubes.Smear pinch of salt and set aside.Clean,wash and chop finely methi leaves discarding roots.Mince garlic. Heat oil in a wok or pan. Sprinkle 1 dry red chilli and paanch phoron. When they splutter,add minced garlic and fry till light brown.Add brinjal and fry on low flame till soft.
* Step 2
Add turmeric, salt to taste and pinch of sugar.Toss and add methi leaves. Sprinkle sesame seeds and fry till dry.
* Step 3
Garnish with fried red chilli and serve hot in lunch or dinner with steamed rice,roti or paratha.
