Sooji Badam Burfi or Nutty Semolina Fudge

This is an unique Indian traditional melt in mouth sweet made with suji or rava or semolina and slivered almonds and cashewnuts.This delicious sweet is perfect for any celebration and can be served chilled . Suji burfi is similar to suji halwa but dense and later dried and shaped into diamond, rectangle or square cuts.These burfi can be made attractive by adding food colour or by soaking few strands of saffron in milk and adding it to the mix.

Cooking instructions
* Step 1
Heat ghee in a wok.Lightly fry suji for 4 to 5 minutes in medium heat till light golden in colour and there is a nice aroma.Set aside.In the meanwhile boil sugar with water.Add a pinch of food colour but this is optional.Boil till sugar dissolves.
* Step 2
Add suji,milk powder,milk and toss continuously till suji is cooked and the mixture will begin to leave the pan.Sprinkle crushed cardamom powder and mix well.
* Step 3
Pour the mixture into a greased plate or tray.With the back of a spatula make the surface smooth.Sprinkle chopped almonds and cashewnuts over it.Cool and refrigerate for 10 minutes till well set.Cut the mixture into square,rectangle or diamond shaped burfi or fudge with a sharp knife.Store in airtight container and refrigerate. Serve delicious suji or rava burfi or semolina fudge chilled as an after meal dessert or on special occasions to guests.
