Cauliflower and Potato or Gobhi Aloo is a popular North Indian style recipe.Mildly spiced with onion, ginger garlic paste , tomato and few other spices,this is one of signature recipe which pairs very well with roti,paratha,naan or as a side dish with rice and dal.One important thing to keep in mind is that cauliflower should not lose its crunchiness and not be soggy.It should be just tender.

Cooking instructions
* Step 1
Smear salt to cauliflower and potatoes.Heat oil and fry cauliflower and potatoes separately in low to medium flame till half cooked and brown spots appear on them.Set aside.
* Step 2
In 1 tbsp oil, sprinkle cumin and fennel seeds.When they crackle, add chopped onion and fry lightly..Add chopped tomato and sprinkle little salt.Fry till tomato is mushy.Add ginger garlic paste,kitchen king masala,turmeric,red chilli powder,black pepper powder,salt and pinch of sugar to taste and kasoori methi.Adding 1 tbsp tomato puree lends a beautiful colour to the gravy.Fry till oil leaves sides.
* Step 3
Add cauliflower and potatoes and toss with the fried masala.Add just little water to make the cauliflower and potatoes tender but not soggy.Sprinkle garam masala and toss.
* Step 4
Garnish with chopped green chillies and coriander.Serve hot with roti,paratha or naan or as a side dish with dal and rice.
