Onion Flower Stalk with Potato or Peyajkolir Torkari

Peyajkoli is nothing but the firm green stem of an onion with a white flower at the top. It is different from green or spring onion or scallion which has thin,tender and long leaves.It is a winter vegetable and can be cooked with potatoes and other vegetables as well.This is a Bengali style of cooking this vegetable and pairs well with roti,paratha and even as a side dish with rice and dal.

Cooking instructions
* Step 1
Cut peyajkoli into 1 inch pieces. Peel and cut potatoes into 1 inch fingers.Heat oil and fry 1 dry red chilli.Set aside. Add paanch phoron.When they splutter,add the chopped potatoes with little salt and fry on low flame till half done.
* Step 2
Add peyajkoli and toss.Add turmeric,red chilli powder,salt and sugar to taste.Fry in low flame.Sprinkle little water and continue frying till done.Add chopped coriander and mix well.Garnish with dry red chilli. Serve hot with roti,paratha or as a side dish with dal and rice.
