“Shelli’s” Macaroni & Cheese
This is my wife, Emma’s, favorite Mac & Cheese recipe. It was originally from a church cook book her mom had when she was a child. She makes it every holiday and it is definitely a comfort food for the family.

Cooking instructions
* Step 1
In 1 quart sauce pan, bring water to rolling boil. Add salt and macaroni stir, cover and turn off. Remove from heat and allow the noodles to soak for 15 minutes, while mixing cheese and preheating oven.
Strain macaroni and set aside.
* Step 2
Preheat oven to 350 degrees F.
Combine ricotta, sour cream, salt, pepper and beaten egg.
Stir well.
Add fine shredded sharp cheddar cheese. Stir well.
Gently stir in noodles making sure to get evenly mixed.
* Step 3
Cover dish with foil and bake for 40 minutes.
Remove foil cover and set oven to broil until top is to desired consistency, about 5 minutes.
Remove from oven and enjoy!
* Step 4
Evenly distribute mixture into 9”X12” greased casserole dish. Sprinkle smoked paprika over the mixture and cover with shredded extra sharp cheddar cheese.
