Dahi Bhalla (Dahi Vada)

This is a delicious North Indian style recipe made with deep fried urad dal dumplings and immersed in a tangy sweet and sour curd mixture and topped with dates and tamarind chutney.
Cooking instructions
* Step 1
Soak urad dal and moongdal overnight in warm water.Next morning discard water and grind the dal with little salt and baking powder to form a thick batter.Beat the batter thoroughly till light and fluffy.Check fluffiness by immersing little batter in water.It should float on top immediately.
* Step 2
Heat oil in a wok and fry dumplings over medium heat till golden brown.
* Step 3
Take a bowl of little salted warm water and immerse the dumplings in it for sometime to get super soft vada.
* Step 4
Squeeze out water from dumplings and arrange them in a serving bowl.
* Step 5
Strain thick curd to get a smooth texture. Add chaat masala,pinch of salt,sugar,roasted cumin powder and tamarind chutney and mix all.Pour this over dumplings.To make tamarind chutney boil dates and tamarind paste with roasted cumin powde r,salt and sugar to taste.Add a pinch of red chilli powder.
* Step 6
Sprinkle roasted jeera powder,chaat masala,little red chilli powder;tamarind chutney and garnish with chopped coriander.Serve chilled.
