Chicken Seekh kabab

#flours This is a simple but a mouthwatering appetiser and healthy too.The aroma of fenugreek leaves makes it a delicious starter.Tender kababs grilled or pan roasted in skewers till golden brown and these can be prepared and kept frozen ahead of time and pan fried or roasted when needed.

Cooking instructions

* Step 1

Boil chicken cubes with little water and salt.Cool and make a paste of it in a mixer grinder.Add crushed bread slices. Add ginger garlic paste,chopped green chilles, black pepper,red chilli powder (optional),crushed kasoori methi, chopped coriander leaves,chaat masala,1 tbsp tomato puree,1 tbsp lemon juice,salt to taste,meat masala and garam masala.Mash all to form a lump.

* Step 2

Heat oil in a nonstick pan and fry the onion golden brown.Add the mashed chicken lump and toss.Add roasted gram flour and toss till dry.

* Step 3

Divide the lump into balls.Dip tandoori sticks metal or wooden in water.Roll each ball around the sticks and make an elongated roll.Roast lightly over open flame.Brush little oil in a nonstick grilling pan or tawa.Toss the kababs till nicely roasted. Option is to use a barbecue grill.Serve with onion rings and lemon slices or a dip made from coriander paste and curd serves as a good accompaniment.
