California Farm Alaska Cod in Mango Cream Sauce
When Mardi Gras was over, our family used to switch to no meat dinners, mainly fish. Here is our favorite family recipe for cod. Mom used peach, pine apple, any sweet fruit, canned or fresh.
Ingredient
Food ration :
2 people, half pound each
Cooking time :
1 hour sauce, 30 minutes fish
Cooking instructions
* Step 1
In small cast iron sauce pan with lid, cover mango with water and boil till fragrant, about 20 minutes, then remove pit, cut flesh in chunks, back into saucepan, simmer with shallots and mango juice down to 1/2 cup. Run through food mill, fine sieve, back into sauce pan. Add cream and wine. Simmer to half a cup.
* Step 2
Rub cod filets with olive oil, then roll in flour, then breadcrumbs, pepper and salt.
* Step 3
Put cod in pre oiled skillet under medium hot broiler, broil filets 15 minutes till golden, flip, broil 15 minutes on other side. Serve with sauce and chopped parsley on top, lemon wedge on the side. Enjoy.
