Lighthouse inn potatoes
Saw this on cooks country and thought I'd give it a go. I make different sizes so there no straight recipe. I serve this with meatloaf 😊
Cooking instructions
* Step 1
Cut ur potatoes in 1 inch cubes. Bring the desired amount of potatoes to a boil in heavy cream. Make sure to cover potatoes fully. This is what the recipe calls for but u can try milk or half and half. Idk i will try this eventually. Add about 2 tablespoons butter,baking soda,salt and pepper. Johnny's seasoning is nice too. Once at high summer reduce to a low simmer for 20 mins stirring occasionally.
* Step 2
Add more butter/ salt and pepper for taste. I add dried parsley but wouldn't mess too much with spices.
* Step 3
Pour potatoes in baking dish
* Step 4
Mix half amount panko with half amount fresh grated parmesan together. Add enough melted butter to make a topping
* Step 5
Cover ur potatoes fully with topping
* Step 6
Bake at 350 until golden brown on top. You can broil on low for 1 min for extra brown like in round dish.
* Step 7
Enjoy and try not to eat often cus ull get fat 😆 😀❤. I want to experiment with different dairy to make lower calories
