Quick Fix Maharashtrian Cucumber Raita
This is a traditional Maharashtrian Recipe - Dhayatli Kakdi chi Koshimbir, I made it with a quick fix "jugaad'/ twist the other night when I wanted to serve it with biryani for dinner 😀

Cooking instructions
* Step 1
Whip the chilled curd with sugar & salt, set aside.
* Step 2
Dry roast the peanuts & cumin seeds on a nonstick pan
* Step 3
Add the curry leaves, saute for a few seconds, until they curl up and change colour. You can even add in a green chilli & roast for a few seconds.
* Step 4
Add the roasted spices to a mixer jar, blend to make a coarse powder.
* Step 5
Add the cucumber to the curd, add the ready powder. Mix well.
* Step 6
Top with fresh coriander and serve immediately.
