Baked Veggie Casserole
This is a signature dish from my kitchen and the whole family loves it! Also, gets the fussy kids to eat an assortment of veggies at one go. 😀
This potato, corn & paneer combo is my family's hot favourite. 👈
You can experiment with the combination of vegetables you want to use in this. You can also add sliced chicken sausages & salami if you wish.

Cooking instructions
* Step 1
Pressure cook the potatoes until soft. Cool, peel & set aside.
* Step 2
Steam the corn, allow it to cool.
* Step 3
Chop the onions, chilles & coriander leaves, set aside.
* Step 4
Chop the Paneer into 1/2 inch thick cubes, set aside.
* Step 5
First, prepare the base. For this, mash the potatoes well. Add the curd & 3 tbsp cream, salt to taste. Knead into a smooth mixture.
* Step 6
Add the fresh coriander & green chillies. You can skip these if you want, but this adds flavour and zing to the dish.
* Step 7
Line the baking dishes with this potato mixture. Pat in well. Keep in the fridge to set while you make e veggie filling.
* Step 8
In a deep cooking pan, melt the butter, add the oil.
* Step 9
Add the onions, fry until translucent.
* Step 10
Add the paneer cubes, pepper & salt to taste. Cook for a minute. Add the corn. Stir & cook for a minute
* Step 11
Add the maida, stir continuously on medium heat & cook for 2 mins the flour coats the veggie mix.
* Step 12
Turn off the heat. Add the cold milk. Add enough to cook into a thick & smooth sauce of pouring consistency. Mix continuously to avoid lumps.
* Step 13
Add a little grated cheese.
Stir & cook on low medium heat until the white sauce turns smooth & thick.
* Step 14
Take out the baking dishes from the fridge. Add the white sauce mix into them.
* Step 15
Cover with grated cheese. Dot with fresh cream on top.
* Step 16
Bake at 150-180 Degree C in a pre heated oven until browned from the top.
* Step 17
Enjoy with toast and soup on the side. We like to out with tomato ketchup / baked beans & mustard sauce on the side.
