Rosh Bora

#Diwalidelights - A simple Bengali traditional homemade sweet made during Diwali is Rosh Bora. It is not usually found in sweet shops. Rosh means syrup and Bora means Vadas. So it is a very easy recipe of vadas made of urad dal (split black gram) and dunked in sugar syrup.

Cooking instructions

* Step 1

For the syrup, take water and sugar in a pan and bring it to a boil. Simmer for 8-10 minutes. Add the saffron and keep aside.

* Step 2

Grind the urad dal to a smooth paste by using very little water. Add the fennel seeds and mix well.

* Step 3

Heat oil. Make round balls out of the dal mix and deep fry them in batches till golden brown in colour. Drain and add them to the syrup. Soak for a couple of hours before serving.
