* Step 1

Heat oil in a kadhai. Splutter whole spices. Add onion and fresh green chillies. Saute till brownish. Put ginger garlic paste and saute till it's rawness is lost.

Next add the button mushroom heads and stalks, salt, turmeric powder and pulao masala. Mix well.

Next add soaked and strained rice.. saute for some time. Be careful else the grains may break.

Transfer the sauteed rice mixture to a pressure cooker having hot water. Let it come to a single boil. Check for salt, if required add. Put the lid and pressure cook for 2 whistles. Let it cool and release pressure.

As rice cools down, fluff up.. and serve with raita and circa pyaz..

This is a very tasty mushroom rice. I generally use sona masuri rice for this dish, as I include this dish, as our regular lunch menu. This dish is easy to make and nutritious too. But if you want to make it for some occasion then certainly use basmati rice and use rice:water in the ratio of 1:2. Garnish with chopped coriander leaves...

Ingredient

2 cups

water

1-2 tbsp

* Step 1

For lemon rice Wash and strain raw rice. Cook rice with salt, turmeric and water in a pressure cooker for 2 whistles. Let it cool.

As it cools, remove lid and let the rice grains settle down. Do not immediately disturb. As it cools a bit, fluff up the rice. Now take a flat parat (vessel) put the cooked rice on that, spread carefully so that grains do not break. Next take lemon juice and put. Mix very carefully.

Next take a kadhai. Heat oil. Fry peanuts and take out. Fry curry leaves and take out. Keep aside. Next splutter mustard seeds, cumin seeds, add chana dal, urad dal,dry red chilies and fresh green chillies. Dust hing, add grated ginger and mix. Put the flame off.

Now put the tadka into the the parath with rice. Cover, so that the chonk aroma is captured and it gets nicely infused. Open after sometime and mix gently. Lemon rice is ready...

Now to make chole paneer sabzi Take a kadhai, heat oil, put bay leaf, cardamom, cumin seeds. Add chopped onion and saute till brownish. Next add ginger garlic paste and continue sauteing. Next add tomato puree and mix. Add salt, turmeric,red chilli powder, cumin powder, coriander powder,curry powder. Mix all well. Add little water and mix. Cook the masala till it leaves oil. Add the boiled chole. Mix and cook for sometime. Next add water as required. Add sugar and garam masala, mix.

Cook till you get the perfect consistency. Add cubes of paneer and mix. Garnish with chopped coriander leaves and Kasuri methi. Cover and cook for sometime. Switch off.

Sukhi khichdi is flavorsome rice primarily having rice and split moong dal. It can be eaten as such. But its accompaniments adds to its flavor. (In the frame there is sukhi khichdi, pili dal, alu bhaja,meetha bhaat, tomato khatta, amba, and pickle) This is again an Odia comfort food. 1/2 cup

moong dal

3 cups

hot water

2 tbsp

Ghee

1 pinch

hing

Cooking instructions

* Step 1

Start by soaking rice and moong dal for at least 30 minutes separately. Then wash them nicely and drain the extra water and air dry.

* Step 2

Next place a pressure cooker. Put ghee and heat it. Add bay leaf, cumin seeds, cardamoms. Put grated ginger, fresh green chilies, and dry red chilies (adjust the spiciness as per your taste). Add a dash of hing. Keep flame slow.

* Step 3

Now add the moong dal and saute for some time. Add salt, turmeric powder, coriander powder, cumin powder, and mix. Next, add the washed rice and saute all together. Be very gentle else rice grains may break.

* Step 4

Next, add hot water and give a gentle mix. Put sugar and black pepper powder. You can put some black peppercorns too. Mix again very gently. Check for seasonings. Adjust as required.

* Step 5

Now place the pressure lid and cook for 2 whistles. Switch off and let it cool and release pressure. Open but do not disturb immediately. Let it settle. Put a tsp of desi ghee on top and mix. The aroma is superb.

* Step 6

Serve hot. It goes well with curd, pickle, and papad too.

4 . Southern spice tomato rice

Ingredient

1/2 tsp

cumin seeds

chana dal

Cooking instructions

* Step 1

In a vessel soak washed rice. Then take a pressure cooker. Add oil and heat. Crackle mustard seeds, cumin seeds. Add chana dal, gota urad dal, fresh curry leaves.

* Step 2

Dust hing. Add chopped onion, fresh green chillies and saute for sometime. Then add chopped tomatoes. Put salt, turmeric, red chilli powder, coriander powder, cumin powder. Mix all well. Cover and cook at slow flame, till tomatoes become mushy.

* Step 3

As tomatoes are softened, add rice (rice was strained and extra water was removed). Gently mix all the ingredients, as because rice grains may break. Let it be on slow flame for sometime. Mix intermittently.

* Step 4

Next add hot water, put in sambar masala and mix. Put handful of coriander and mint leaves. Gently mix. Check for seasonings. Adjust as required.

* Step 5

Finally put the pressure cooker lid and cook for 2 whistles at slow to medium flame.

* Step 6

After the whistles. Switch the flame off. Let the cooker release pressure. Open and fluff the rice gently.

* Step 7

It's ready... garnish with some mint leaves and serve with curd, pickle and papad

5 . Masala khichdi

100 g

moong dal

1/2 tbsp

ghee

3/4 tsp

sugar

40 ml

1/2 tsp

Cooking instructions

* Step 1

Start by soaking rice and dal separately for at least 30 minutes. Then wash them properly and drain the extra water.

* Step 2

Next take a pressure cooker,add water, salt, turmeric powder, ajwain,ginger, black pepper powder, sugar and ghee.

* Step 3

As the water comes to boil add the rice and dal into it. Put the pressure cooker lid and cook for 3 whistles at medium flame.

* Step 4

Side by side, prepare for tadka. Cut the veggies, onion, tomato and keep aside.

* Step 5

As the pressure cooker becomes cool, open the lid.Put water to make it semi solid. You can add water as per your wish. Mix to make it even.

* Step 6

Next start tempering. Put a kadhai, add oil and heat. Crackle cumin seeds, add dry red chillies, fresh green chillies, onion and saute.As onion gets little fried, add vegetables of your choice. Next put chopped tomato and mix. Continue sauteing for sometime.

* Step 7

Next add salt, turmeric powder, garam masala, coriander powder, dry roasted cumin and dry red chillies powder and mix. Cover and cook at slow flame till vegetables and tomato softens.

* Step 8

Now add the cooked rice and dal into it and mix evenly. Add ghee and mix. Garnish with finely chopped coriander leaves and cover lid. Let it be on slow flame for 2-4 minutes.

* Step 9

Next switch the flame off and let it rest for 2 minutes. Then... serve hot hot... MASALA KHICHDI IS READY...

* Step 10

Enjoy it with dahi, papad, aachar and green salad. After serving put some more ghee from top. It's heavenly...a comfort food.
