* Step 1

Soak the ingredients of mustard paste for 30 minutes in lukewarm water.

* Step 2

Grind the soaked ingredients of mustard paste by adding required amount of water to a fine paste.

* Step 3

Keep immediately in refrigerator to avoid the pungent smell and taste of mustard paste. You can store in refrigerator for further use.

* Step 4

Take the chopped veggies in a microwave oven safe bowl. Mix 2 drops of refined cooking oil, 1/2 tsp turmeric powder and a pinch salt, 3 tsp mustard paste very well and cook in the microwave oven for 5-6 minutes to have tender veggies.

* Step 5

Heat mustard oil in a wok. Add hing powder and panch phutan seeds to crackle.

* Step 6

Now add chopped garlic and sauté for 1 min in low medium flame.

* Step 7

Mix chopped onion and curry leaves and cook till the onion translucent. Add chopped tomatoes, 3 tbsp bamboo shoots and adjust the salt. Cook for 3 min or till bamboo shoots is cooked and tomatoes are softened.

* Step 8

Add water to make the gravy. Put the veggies. Mix well. Cover and cook for 2 mins in low medium flame.

* Step 1

Heat clarified butter / ghee in a pan

* Step 2

.Add black mustard seeds and cumin seeds to crackle.

* Step 3

Add green chilli and grated fresh corn and saute for one mins.

* Step 4

Add turmeric powder,red chilli powder,sugar and salt and mix well.

* Step 5

Add milk and cover it.

* Step 6

Cook in a low flame for five mins.

* Step 7

Add lemon juice,fresh coconut and coriander leaves and mix well.

* Step 8

Serve hot

* Step 1

Marinate chicken with red chilli powder,turmeric powder,coriander powder,garam masala powder,fennel seeds powder,black pepper powder and salt.

* Step 2

Heat oil in a pan

* Step 3

Add sliced onion and fry till transparent.

* Step 4

Add ginger garlic paste and tomato puree and mix well.

* Step 5

Add chicken pieces and one tbsp water and fry in a low flame.

* Step 6

Add cashew nuts paste and coconut milk and mix well.

* Step 7

Add half cup of water and cover it.

* Step 8

Cook 8 - 10 mins in a low flame.

For tempering

Heat one tsp oil in a pan.

* Step 11

Add black mustard seeds/rai,whole red chilli and switch off the flame. and add curry leaves.

Temper the chicken in serving bowl.

Add boiled sweet potatoes and stir fry for 1 - 2 mins.

* Step 4

Add red chilli powder,amchur powder,salt,sugar and turmeric powder and mix well.

Add half cup of water and cook for 2 - 3 mins.

* Step 6

Serve with rice or chapati
