Ingredient

1/2 Cup

Wheat Flour

1/4 Cup

Honey

1/8 tsp

Baking Soda

2 cup

sugar

1 cup

water

Cooking instructions

* Step 1

Make a smooth batter out of all the ingredients mentioned above except the oil and ghee for the frying purpose

* Step 2

Allow it to sit/rest for at least 1-2 hrs time, more is good as it gives sufficient room for the sooji to inflate well enough

* Step 3

Then take the measured amounts of both refined oil and ghee for the deep frying purpose- In a wide mouthed, heavy & deep wok/frying pan/kadhai

* Step 4

Heat the oil well first & then reduce the flame from high to low-medium, all through the entire frying tenure

* Step 5

Take a medium sized round deep ladle & each time, pour in a ladle full of the batter into the middle of the frying pan and allow it to first come up & float onto the surface of the oil

* Step 6

Then, flip onto it's other side- pour in another one ☝🏻 in the similar manner & in the same way, each time- you can fry at least 3 Malpuas, altogether

* Step 7

Finally, once well fried in brown colours in both the sides, take out of the oil on a plate with kitchen towel to drain out it's excess oil & then, immediately transfer them, to the already prepared & warm sugar syrup

* Step 8

Our MALPUAS are ready to be served to the LORD 💁🏻‍♀️🙏🏻

Ingredient

Cooking instructions

* Step 1

Take a wok or pan, add full cream milk, boil it. Lower the flame, keep boiling, stirring until a lil thick.

Meanwhile add sugar, elaichi powder & rose water, mix it well. Turn off the flame, keep aside.

Take a dish, arrange the slices, spread milk evenly. Add dry fruits.

Roll the soaked bread slice, make balls, keep aside.

Take a wok, add med amount of ghee, heat it. Deep fry the balls until brown.

Transfer some rabri in a serving bowl, add the bread balls. Pour some rabri over the balls. Garnish it with rose petals.

Cooking instructions

* Step 1

Take a deep bottom pan, add milk, boil it.

* Step 2

Keep boiling on low flame until a lil thick.

* Step 3

Strain chawal, add in the milk, cook it at low flame for 10 minutes.

* Step 4

In goes sugar, elaichi powder & kewra water, mix it well. Cook it until a lil thick.

* Step 5

Turn off the flame, transfer it into a bowl. Keep aside.

* Step 6

Take a pan, add ghee, fry nuts until light brown. Take out in a bowl.

* Step 7

Garnish kheer with these nuts.

* Step 8

All cooking has been done on low flame.

Ingredient

1/2 tsp

Cooking instructions

* Step 1

To make oats ata, take oats in a grinder, grind it to a fine powder.

* Step 2

Take a mixing bowl, add both the ata & all the given ingredients except ghee, mix well.

* Step 3

Now add water slowly slowly, knead a soft dough.

* Step 4

Cover it with wet cloth & rest it for 10-15 minutes.

* Step 5

Now take small portions of ata, make small balls.

* Step 6

Roll it to make a lil thick, med sized roti.

* Step 7

Take a non-stick tawa or you can use a heavy iron tawa, heat it.

* Step 8

Place Roti, bake it both side until light brown.

* Step 9

Now spread ghee both side, cook it till golden brown.

* Step 10

Take out in a serving dish, serve it with aloo sabzi or any other dish.

Ingredient

1 cup

sugar

3/4 cup

water

Cooking instructions

* Step 1

Cut the slices into triangle. Take one pan and dissolve the sugar. In the sugar add some threads of kesar and drop of lemon juice.

* Step 2

Now heat desi ghee in a pan and deep fry the slices. You can shallow fry them also but I like traditional shahi tukda so I always deep fry them.

* Step 3

Fry it until golden brown then dip it in the sugar syrup (your syrup should not be very hot and not be very cold). Soak it for 5-7 minutes then take out in a strainer so that extra sugar will drain out.

* Step 4

Decorate it with Lachha Rabri (see recipe), kesar and rose petals.
