1 . Lemon Ricotta Penne

1 tbsp

lemon juice

Cooking instructions

* Step 1

Cook pasta as per packaging instructions. Drain, reserving 1/4 cup of pasta water, then set aside.

* Step 2

Heat olive oil on medium in a skillet or pan. Add spinach and onion and cook until spinach is wilted.

* Step 3

Add garlic and cook for 1 minute. Reduce heat to low and stir in the ricotta cheese.

* Step 4

Add lemon zest and juice and stir until creamy. Then, add pasta water and stir again until combined.

* Step 5

Stir in parmesan cheese and season with salt and black pepper.

* Step 6

Add in cooked pasta and stir well until pasta is well coated with ricotta sauce. Garnish with basil, red pepper flakes and extra parmesan cheese if desired, then serve. You can also add an extra squeeze of lemon juice for a stronger citrus flavour.

Ingredient

1 tbsp

olive oil

1/2 tbsp

tapioca starch

1/4 tsp

onion powder

1/4 tsp

salt

1/2 tbsp

white vinegar

Cooking instructions

* Step 1

Cook pasta as per packaging instructions.

* Step 2

While waiting for pasta to cook, stir together all the sauce ingredients in a bowl or shake in a jar with a lid until combined. Set aside.

* Step 3

Once pasta is cooked, drain and set aside.

* Step 4

In a skillet or pan, heat oil on medium heat and add garlic and onion. Fry for a few minutes, until starting to brown.

* Step 5

Add flour and stir to coat.

* Step 6

Add coconut milk, onion powder, garlic powder, salt and pepper and stir. Bring to a simmer, stirring frequently until sauce thickens slightly, about 2-3 minutes.

* Step 7

Add half of the sauce and stir to combine. Taste and add more, if desired.

* Step 8

Add cooked pasta and tapioca starch, stirring to combine. Allow to simmer and the sauce will thicken quickly so remove from heat once it has thickened to your liking.

* Step 9

Serve with parsley and top with a few more drops of Red Hot sauce, if desired.

1 1/2 tbsp

butter (salted)

1/2 cup

milk

1/2 cup

sour cream

1/2 tbsp

olive oil

Cooking instructions

* Step 1

Cook pasta as per its packaging instructions. Drain, reserve some pasta water for loosening the sauce later if required.

* Step 2

In a pan, melt butter on low heat and add garlic. Sauté for a few seconds, and not let the garlic brown up.

* Step 3

Add flour little by little, stirring as you go along so it does not clump up.

* Step 4

Add milk and let the sauce thicken, stirring continously. If the sauce becomes too thick, add some pasta water. Take the pan off the heat.

* Step 5

Stir in sour cream and mix it into the sauce with a spoon. Add the cooked pasta, olive oil and chives and mix to coat with the sauce.

* Step 6

Top with more chives and serve.

Cooking instructions

* Step 1

Cook pasta as per instructions on its packaging. Drain, and reserve about 1/4 cup of pasta water for later.

* Step 2

Meanwhile, add spinach to a pan on medium heat and cook until wilted, about 2-3 minutes. Add a tbsp of pasta water to spinach if it sticks to the pan.

* Step 3

Transfer the spinach to a blender along with silken tofu, nutritional yeast, cashews, garlic, olive oil and generous pinches of salt and pepper. Blend until smooth, adding a tbsp or so of pasta water to the sauce, if needed, to loosen it up.

* Step 4

Pour spinach sauce into the pan used earlier and heat on low until warm. Transfer cooked pasta into the sauce and stir to combine.

* Step 5

Serve with grated parmesan and chilli flakes, if desired.

In a pot, add olive oil, pressed garlic, chicken pieces and salt and pepper. Cook until meat is brown. Then add broth, cream and uncooked penne and stir well. Cook covered for 15-20 minutes with occasional stirring.
