150 grams

fresh turmeric

1/2 tsp

cumin seeds

mustard oil

Cooking instructions

* Step 1

Wash and peel turmeric. Cut into desired shapes. Keep in sunlight or under fan for two hours.

* Step 2

Turmeris is ready. Dry roast the spices except red chilli powder and nigella seeds.

Grind coarsely the spices and keep aside.

Heat mustard oil till smoking point. Put off flame and add green chillies. Saute few seconds and add to dried turmeric.

Add amchur powder, red chilli piwder and ground spices. Add half of the mustard oil also. Mix.

* Step 6

Store in a dry air tight container.Pour remaining oil. Keep in sunlight for 2-3 days. Turmeric Pickle is ready to be served.

besan

green peas

1 tbsp

lemon juice

baking soda

Cooking instructions

* Step 1

Take all the ingredients into a bowl. Add some water to make a thick batter.

* Step 2

Heat oil in a shallow pan. Putvone ladle full to the oil. Add multiple laddls according to the size of pan.

* Step 3

Fry on low -medium flame till golden and crispy.

* Step 4

Take out and serve with green chutney.

* Step 1

Mix all the ingredients for stuffineg in a bowl.Keep aside.

Make a soft dough with the ingredients of covering.Rest 10 minutes.Divide into 6-7equall portions.Roll each portion in a chapati.Put 2 tbsp stuffing in the centre and fold as shown in picture.

Again roll into a paratha.

Heat a tawa.Fry parathas by adding some oil/ghee.Fry till crisp.

Cooking instructions

* Step 1

Heat oil in a pan,add chopped garlic and green chillies.Saute 1 min.Add all vegetables (except potato)and powdered spices.

Add 1/4cup water and cook for 2-3minutes on low heat.

* Step 3

Take out and let cool.Add boiled and grated potato.Mix well.Give the shape of cutlet.

Mix all the ingredients of coating,add a little water to make a slurry.Dip the cutlet in slurry,coat with bread crumb.Keep aside.Prepare all like this.

* Step 5

Heat oil in a pan.Fry cutlet on medium hot oil till golden and crispy.Enjoy.

1/2 tsp

cumin seeds

1 pinch

asafoetida

as per taste

Cooking instructions

* Step 1

Heat a pan,add 2 tbsp oil.Add cumin seeds and asafoetida,add chopped onion.Fry till golden.

* Step 2

Add ginger -garlic paste,saute for 2 minutes.Add all dry spuces,saute for a minute.

* Step 3

Add pumpkin and salt,add 1/2cup water.Cover and cook for 7-8minites till pumpkin is soft.Take out and let it cool.

* Step 4

Grind to a smooth paste.Add wheat flour,mix.Add flour in batches and add the desired quantity.I added 1.5 cups of wheat flour.Make a smooth dough.

* Step 5

Apply a little oil on dough Cover and leave for 10 minutes.

* Step 6

After 10 minutes,make puris and fry till golden.

* Step 7

For raita,whisk the curd add cumin powder and red chilli powder with salt.Blend and add 1/2cup water.

* Step 8

Mix well,garnish with cumin powder.Serve with pumpkin pooris.With the pumpkin pooris we do not neet any curry as side dish.So enjoy the pooris with raita/pickles /chutney.
