maida

Cooking instructions

* Step 1

Heat milk in a pan and coffee to the hot milk

Seive whole wheat flour + maida + salt + baking powder + baking soda + salt in a bowl

To this bowl add, milk - coffee mixture, water, vanilla essence, oil and walnuts

Grease a baking tin.. Mix the above ingredients well but don't over mix. Add chocochips and mix again.

Pour the batter in a greased and lined baking tin

I baked it in a preheated Kadai.. At low flame for 55 mins

The cake directly from the pan..

Let the cake cool, demould and keep it a wire rack to cool more

Ingredient

* Step 1

In a pan toast the walnuts for 1-2 minutes on medium flame.

In a pan boil water add salt. Add macaroni to it. Cook the macaroni until Al dente. Take it aside.

In a karahi heat olive oil. Add mustard seed, red chilli, curry leaves and hing.

After a few second add chopped garlic. Saute for one minute. Add chopped onion. Cook for 1-2 minutes until light golden in colour.

Now add boiled macaroni. Cook for 2 minutes. Add salt, pepper powder and coarsely grounded walnuts. Saute for a few second.

Now add coconut milk. Cook for 2-3 minutes. When the pasta becomes thick then switch the flame off. Garnish with walnuts. Serve hot.

Tasty and easy apple pie without rolling out filo sheets and with much healthier ingredients.

Ingredient

* Step 1

Sift the flour and place it in a bowl together with the vanilla and the baking powder.

Mix, make a well in the middle and add the oil, the sugar and the egg, lightly beaten.

Knead and when your dough looks like trahana (like crumbles) it is ready.

Peel and grate the apples coarsely and mix them with the rest of the ingredients for the filling (walnuts, sugar, cinnamon).

Brush a medium-sized baking tray with oil and spread half of the dough (pressing it down a little to make it even).

Spread the filling ot top and cover with the rest of the dough (pressing it down once again).

Brush with a little egg (for the colour) and bake for about an hour at 180°C.

When it is ready remove from the oven and sprinkle with a little icing sugar while it's still hot so that the sugar sticks.

A karidopita (Greek walnut cake with syrup) recipe that comes from a cookbook bought 20 years ago. Unfortunately the cover is ruined so I don't know the edition!

Ingredient

3 cups

sugar

1 cup

milk

1/2 cup

butter

1 tsp

cinnamon

1/2 tsp

ground clove

1 1/2 cup

flour

2 tbsp

cognac

2 cups

water

1 tbsp

lemon juice

Cooking instructions

* Step 1

Beat the butter.

Add the sugar and the eggs.

Pour in the milk,

* Step 4

Then the walnuts tossed with the cinnamon and the cloves.

Add the baking soda dissolved in the cognac.

Combine the flour with the dried bread crumbs and the baking powder. Add them to the mixture stirring lightly.

Butter the baking tray and dust lightly with flour.

Bake for 1 hour in a hot oven at first and then turn down the heat.

Boil the syrup for 5 minutes.
