Another quick and easy mid-week recipe using lean turkey mince.

Ingredient

Cooking instructions

* Step 1

Preheat the oven to 180degrees. Fry the red onion in a tbsp oil over a medium heat. When soft, add the garlic, mushrooms and chilli and fry for a couple more minutes. Then add the turkey mince (breaking it up with a spoon) and fry until starting to brown.

* Step 2

Next mix in the oregano, cumin, tomatoes, parsley, seasoning and crumbled stock cube and simmer for 15 minutes.

* Step 3

Meanwhile, place the peppers on a baking tray, coat with a little oil and cook for 15 minutes.

* Step 4

Remove the peppers from the oven and fill with the turkey mixture. Top with a little feta and cheddar cheese and bake for another 15 minutes until golden.

Yum! This worked really well, and was very tasty. Another experiment gone right!

Ingredient

1/2 cup

breadcrumbs

1/2 cup

milk

Cooking instructions

* Step 1

Preheat oven to 170°'

* Step 2

Mix milk and breadcrumbs together and leave for 5 minutes.

* Step 3

Gently mix in all of the rest of the ingredients, except the cheese and the bacon.

* Step 4

Shape your mix into 8 burgers.

* Step 5

Place your cheese in the middle of 4 of your burgers, approx 10g on each. Top with your bacon (it's best to use raw bacon add it's easier to shape the final burger. This is why I use medallions as there will be no fat on it that would need pre cooking).

* Step 6

Put one of the empty burgers on top of one with topping, and seal the edges together, sealing the bacon and cheese inside.

* Step 7

You will find that one side is flat and the other well have a bump - I gently throw my burgers between my hands to make it an even shape, but you can leave it if you like. Check there are no cracks to the inside - you don't want your cheese leaking out!

* Step 8

Bake in the oven for approx 30 mins - alternatively try it on the BBQ!

* Step 9

A simple recipe that doesn't take too long :)

Ingredient

1/2 cup

breadcrumbs

1/2 cup

milk

100 grams

grated cheese

Cooking instructions

* Step 1

Preheat oven to 180°C.

* Step 2

Mix milk and breadcrumbs, and leave for 5 minutes.

* Step 3

Add the rest of your meatball ingredients and mix gently.

* Step 4

Shape into balls - you should be able to get 5 or 6 per portion.

* Step 5

Bake for approximately 30 minutes, or until they start to turn golden.

* Step 6

For the sauce: Mix all ingredients in a saucepan and heat. I like to blend mine to make it smooth, but that's up to you.

* Step 7

Add your cooked meatballs to your sauce, and heat gently for a further 10 minutes.

* Step 8

Serve with pasta and enjoy!

This was an "oh no, what shall I make for dinner" recipe. I slapped together some things in the kitchen, and it worked so well I thought I'd share :)

Ingredient

1/2 cup

breadcrumbs

1/2 cup

milk

soy sauce

2 tbsp

corn flour

4 tsp

chili

Cooking instructions

* Step 1

Preheat oven to 180

* Step 2

Mix milk and breadcrumbs together in a bowl. Leave to sit for 5 minutes.

* Step 3

Add the rest of the meatball ingredients to the milk and breadcrumb mixture, and mix gently.

* Step 4

Shape into meatballs - you should be able to make around 5 medium sized meatballs per person.

* Step 5

Bake for approximately 30 minutes, or until they start to go golden brown around the edges.

* Step 6

For the soup: Mix all ingredients except the corn flour, noodles, and vegetables in a large saucepan.

* Step 7

Stir everything together, and when the liquid is at boiling point, add your meatballs and vegetables.

* Step 8

Add your noodles after 5 minutes. Cook for as long as required on the packaging.

* Step 9

In a separate bowl have your corn flour ready. Use a large spoon to remove some of the liquid from your pan and mix it in the dish with the corn flour. Do this until you have a thick, but still pourable flour and stock mixture. Add to your soup.

* Step 10

Cook for another 2-3 minutes.

* Step 11

Serve and enjoy!

Ingredient

1 tbsp

olive oil

2 tbsps

tomato puree

4 tbsps

tomato salsa

Cooking instructions

* Step 1

Place the olive oil in a large pan over a medium heat Add in the onion, pepper, garlic, chilli, paprika and cumin Sauté for 5 minutes

* Step 2

Add in the turkey mince and brown for 5 minutes Pour in the chopped tomatoes, chicken stock and tomato puree Bring to the boil and simmer for 20 minutes or until the sauce has thickened Season to taste

* Step 3

Divide the tortilla chips between four bowls Spoon on the turkey chilli and spinkle on some dairy freecheese Place under the grill for a couple of minutes

* Step 4

Top with the crushed avocado and tomato salsa
