This rice dish is extremely easy to make if you have a rice cooker. Place all ingredients, except for Edamame Beans, in the rice cooker’s inner pot and press the button to start. I used only 1 can (120g) Sardines in Olive Oil. If you want to add more Sardines, you need to alter the amount of Water and Soy Sauce.

Ingredient

Soy Sauce

1 can (120 g)

Sardines in Olive Oil

Cooking instructions

* Step 1

Wash Rice, drain, and place in the rice cooker’s inner pot. Add Water up to the 2-cups marking, add Dashi Powder.

* Step 2

Cut off the bottom of Shimeji, tear into smaller pieces, and spread evenly. Sprinkle with Soy Sauce and Mirin. Empty the can of Sardine into the pot, that means you add all the oil and liquid in the can as well.

* Step 3

*Note: If you use a larger size can of Sardines with more liquid, reduce the amount of Soy Sauce slightly as the liquid in the can is quite salty. If you use a can of Sardines in Brine, I recommend to drain the Brine and add 1 tablespoon Oil.

* Step 4

Press ‘COOK’ button to start cooking.

* Step 5

When the rice is cooked, scatter Edamame Beans, let steamed for 10 minutes.

Gently mix to combine. Sprinkle some finely chopped Spring Onion and Toasted Sesame Seeds, and enjoy. *Note: I added Crispy Chilli Oil as well, but it is optional.

Today I cooked Asparagus Pasta, which is a very popular dish. Some people season it with Lemon Juice, some people add Cream, and I was going to season it with Soy Sauce. ‘Olive Oil, Garlic and Soy Sauce’ is a great combination, and I love the the flavour. However, I added Seasoned Kombu (Kelp) that is called ‘Shio Kombu’ (塩こんぶ) in Japanese. ‘Shio Kombu’ is strongly seasoned with Soy Sauce and it is often used as a seasoning. Yes, I added Parmesan. You probably have no idea how this dish tastes like. You need to cook it and taste it. If you couldn’t find ‘Shio Kombu’, you can add some Soy Sauce instead.

* Step 1

Cook Pasta in boiling salted water according to the instruction on the package. Prepare vegetables.

* Step 2

When Pasta are half cooked, heat Olive Oil in a frying pan over medium heat, cook Onion and Garlic for a few minutes, then add Asparagus. When Asparagus are firmly cooked, add Edamame and 1/4 cup of the salted water that is cooking Pasta. Lightly season with Salt and Pepper.

* Step 3

Drain the cooked Pasta, add to the pan, then add Seasoned Kombu (Kelp) as well, and mix to combine. Remove from the heat, add grated Parmesan, and combine. Sprinkle with the saved Parmesan on top and enjoy.

Mixed Beans & Haloumi Salad

This salad is a variation of my ‘Edamame Mixed Beans Salad’. I often add Fetta Cheese to the salad, but today I added fried Haloumi and plenty of leafy salad vegetables. It’s a perfect side dish, but it can be a nutritious meal.

Ingredient

1-2 tablespoons

Olive Oil

Cooking instructions

* Step 1

Place drained Beans and Vegetables in a mixing bowl, add Oregano (OR Herb of your choice), Lemon Juice OR Vinegar, and Olive Oil. Season lightly with Salt & Pepper. Mix to combine.

* Step 2

Cut Haloumi 6-7mm thick, then cut into bite-size pieces. Heat a small amount of Oil in a frying pan over medium heat and cook Haloumi until both sides are nicely browned. *Note: You may wish to use a grill pan.

* Step 3

Place plenty of Leafy Salad Vegetables on a large serving plate, arrange Haloumi and Beans salad with all the liquid (dressing).

I often add Chicken OR Pork to this type of Glutinous Rice dish, but making it Vegan is easy. I used Abura-age (Fried Thin Tofu) for this Vegan version. It’s a good source of protein and a wonderful flavour comes out of it. I added Edamame as well, so this dish contains plenty of protein. Bamboo Shoot can be a great addition. You might think this dish tastes bland, but this is the typical Japanese flavour, which I love very much.

Ingredient

Carrot

320 ml

Water

1/2 teaspoon

Salt

1 tablespoon

Soy Sauce

1 tablespoon

Mirin

Cooking instructions

* Step 1

Slice OR cut Shiitake, Carrot and ‘Abura-age’ (Fried Thin Tofu) into small pieces.

* Step 2

Place all the Soup ingredients in a measuring jug OR bowl, and mix well.

* Step 3

Wash Glutinous Rice and Regular Short Grain Rice together, drain well, and place in Rice Cooker’s inner pot.

Scatter Shiitake, Carrot and ‘Abura-age’. Gently pour the soup over, but DO NOT stir.

Press the Cook/Start button. When the rice is cooked, add Edamame and let them steamed for 10 minutes, then gently mix to combine.

* Step 6

Sprinkle with some finely chopped Spring Onion and toasted Sesame Seeds, and enjoy.

The mixture of Canned Tuna, Japanese Mayonnaise and a little bit of Soy Sauce is delicious, and it can be used for a variety of dishes, particularly for salads. I often mix Edamame Beans (young Soy Beans) with it, but today I added Canned Mixed Beans as well. It turned out a delicious and nutritious salad. And it didn’t cost me much.

Ingredient

2-3 tablespoons

Japanese Mayonnaise

1 can (400 g)

Mixed Beans *drained

Cooking instructions

* Step 1

Place Cucumber, Red Onion and Edamame Beans in a mixing bowl. Season with Salt and Black Pepper. Freshly ground Black Pepper is the best.

* Step 2

Add Tuna, Japanese Mayonnaise and Soy Sauce, and mix to combine. Taste it, you might need to add extra Salt & Black Pepper.

* Step 3

Add drained Mixed Beans and combine.
