My ‘Creamy Sesame Dressing’ goes well with many Vegetables, but particularly good with Spinach. The other day I made this salad using leftover Boiled Eggs, and it was so good. I made it again to take this photo. This is how I made it.

Ingredient

2 tablespoons

Japanese Mayonnaise

1/2 teaspoon

Sugar

1 teaspoon

Rice Vinegar

1 teaspoon

Soy Sauce

Cooking instructions

* Step 1

Combine all the Creamy Sesame Dressing ingredients in a small bowl. *Note: If you don’t have a grinder, wrap Toasted Sesame Seeds with food wrap or paper, and use a rolling pin (OR a spoon) to press down the seeds.

* Step 2

Place Baby Spinach and Onion in a mixing bowl (OR serving bowl), add the Dressing, mix to combine, then add Boiled Eggs and roughly mix.

* Step 3

Add some Fried Shallot on top and enjoy.

Oyster Mushrooms & Chicken with Creamy Sesame Sauce

My ‘Creamy Sesame Dressing’ goes well with many Vegetables, and it can be used as a sauce for Chicken and Fish. Today I added the almost same Sauce, that is only slightly less sour than the Dressing, to the stir-fried Oyster Mushrooms & Chicken. Absolutely simple dish. You can add Carrot, Broccoli, etc.

Ingredient

1/2 tablespoon

Oil

1/2 teaspoon

Sugar

1 teaspoon

Soy Sauce

1/2 teaspoon

Rice Vinegar

Cooking instructions

* Step 1

Combine all the Sauce ingredients in a small bowl.

* Step 2

Cut each Chicken Tenderloin into bite-size pieces. Clean Oyster Mushrooms and tear into smaller pieces. Cut in half if large.

* Step 3

Heat Oil in a frying pan over medium heat and cook Chicken until nicely browned and cooked.

* Step 4

Add Garlic and stir, then add Oyster Mushrooms, and stir until Mushrooms are cooked. Season with Salt & White Pepper.

* Step 5

Drizzle the Sauce over and sprinkle with some finely chopped Spring Onion.

When you want to cook something that is new to you, you probably try to use it for the dishes that are familiar to you. I tried to use ‘Yuba’ (Tofu Skin) for ‘Goma-ae’, a Japanese dish of vegetables dressed with sweet sesame seed sauce. I cook ‘Goma-ae’ very often and you can find many ‘Goma-ae’ recipes on this website. ‘Yuba’ is made from Soy Bean and it is almost tasteless. It goes well with ‘Goma-ae’ Sauce.

Ingredient

1/2 tablespoon

Sesame Oil

1 pinch

Salt

2 tablespoons

Soy Sauce

Cooking instructions

* Step 1

Break Dried Yuba (Tofu Skin) into bite-size pieces, soak in warm to hot water for 30 minutes OR until rehydrated and soft, then drain. *Note: It might take much longer time to rehydrate the compressed parts.

* Step 2

Cook rehydrated Yuba in slightly salted water for 5 to 10 minutes, then drain. Squeeze to remove excess water.

* Step 3

Grind Toasted Sesame Seeds, OR use the trick ‘How To Grind Sesame Seeds Using A Plastic Bag’. Add Sugar and Soy Sauce and mix well to make ‘Goma-ae’ Sauce. *Note: I made this ‘Goma-ae’ Sauce sweeter than usual.

* Step 4

Heat Sesame Oil in a frying pan over medium heat, cook Carrots for a few minutes. Add 1 pinch Salt and Chilli Flakes (if you like this dish spicy), stir, and remove from the heat while they are still crunchy.

* Step 5

Combine Carrot, ‘Yuba’ and ‘Goma-ae’ Sauce.

4 . ‘Goma-ae’ Avocado

‘Goma-ae’ is a Japanese dish of vegetables dressed with sweet sesame seed sauce. Sesame Seeds need to be toasted, and Sugar and Soy Sauce are used to make the sauce. Depending on the vegetables that I use, I sometimes add extra ingredients such as Chilli. For Avocado, I highly recommend to add a little bit of Vinegar. The slight sourness in the sauce takes this dish to next level.

Combine all the ‘Goma-ae’ Sauce ingredients in a bowl. Add Avocado and gently combine.

I first made this dish by accident. I made ‘Goma-ae’ Broccoli the other day. ‘Goma-ae’ is a Japanese dish of vegetables dressed with ‘Goma-ae’ Sauce, which is made of Toasted Sesame Seeds, Sugar and Soy Sauce. I frequently make it using a variety of vegetables. However, this time, the sauce was too much for the amount of Broccoli and the flavour was too strong. I needed to add something else. Then I found some cooked Chickpeas in the fridge and I added them to the Broccoli. OMG!!! It was delicious. Why have I never used Chickpeas for ‘Goma-ae’? Now I have another ‘Goma-ae’ recipe to share with you.

Ingredient

1 tablespoon

Cooking instructions

* Step 1

Cook Broccoli firmly. Steaming OR Pan-steaming method is recommended. To pan-steam Broccoli, drizzle a very small amount of Oil in a frying pan, arrange Broccoli in the pan, add 2 tablespoons Water, cover with a lid, and cook over medium heat until Water in the pan is evaporated.

* Step 2

Combine all the ‘Goma-ae’ Sauce ingredients in a mixing bowl. Add cooked Broccoli and drained Chickpeas, and mix to combine.
