Chestnuts & Dried Mushrooms Rice

You can use any Dried Mushrooms, but I strongly recommend to use some Dried Porcini. Today I added Dried Mixed Forest Mushrooms as well. These Dried Mushrooms are available from most supermarkets in Melbourne where I live. Chestnuts might be hard to find. I have very sore hands and can’t peel Chestnuts, so I used Frozen Peeled Chestnuts. Many Asian grocery stores sell them. This rice dish is absolutely delicious and smells amazing.

Ingredient

1 tablespoon

Cooking instructions

* Step 1

Soak Dried Porcini and other Mushrooms in 2 & 1/2 cups warm water until soft. When soft, drain, and save 450ml water, but avoid the settlings. Rinse the Mushrooms and cut into smaller pieces if large. *Note: DO NOT squeeze the softened Mushrooms to remove excess water.

* Step 2

Place Onion, Garlic and softened Mushrooms in the rice cooker’s inner pot. Drizzle with Olive Oil.

Rinse Rice, drain, and spread over the Onion, Garlic and Mushrooms.

Add the saved 450ml Water that is used to soak Dried Mushrooms and Stock Cube, sprinkle Salt, but DO NOT stir. Scatter Chestnuts on top. Press Cook/Start button.

When the rice is cooked, scatter Butter, and let the rice steamed for 10 minutes. Add some Ground Black Pepper and gently mix to combine. Sprinkle with some Thyme leaves (OR finely chopped Parsley) and serve.

Japanese Curry Roux Chicken Rice

This recipe can be a life-saver for busy parents. When my children were young and I was a very busy mum, I sometimes could not bother thinking about what to cook for dinner. One of my choices was Curry that I could cook with S&B Curry Roux blocks as it was easy to prepare and my children always enjoyed it. However, on a very hot day, I couldn’t bother cooking the Curry either. This rice dish is super easy. You put everything in the rice cooker and press ‘Start’ button. If you have a bit more energy, make a salad. Then you will have a perfect dinner.

Ingredient

1/2 teaspoon

Salt

1 tablespoon

Ketchup

Cooking instructions

* Step 1

Cut Chicken Fillets into bite-size pieces and place in the rice cooker’s inner pot.

Wash Rice, drain the water, and spread over the Chicken.

Cut Onion and Carrot into small pieces, and scatter over the Rice.

Gently pour Chicken Stock, but DO NOT stir. If you add a Stock Cube, thinly slice it, and scatter it. Sprinkle with Salt, slice Curry Roux blocks thinly, scatter over the vegetables, and drizzle with some Ketchup.

Press the Cook/Start button. When the Rice is cooked, add Peas and let them steamed for 10 minutes, then gently mix to combine. Add some Salt & Pepper if required. Serve with a refreshing salad.

3 . Rice Cooker Fried Rice

Well… this dish is not fried, so I shouldn’t name it Fried Rice, but it is almost the same as typical Fried Rice. It is extremely easy to prepare if you have a rice cooker. You don’t need to stand in front of hot cooktop. Place everything in the rice cooker’s inner pot and press the button to start cooking. Add whisked Egg at the end when rice is cooked. While the rice cooker is cooking this dish, you can make a refreshing salad. Dinner will be ready easily.

Ingredient

1 tablespoon

Sesame Oil

1/4 teaspoon

White Pepper

2 tablespoons

Sake (Rice Wine)

1 tablespoon

Soy Sauce

Cooking instructions

* Step 1

Drizzle Sesame Oil in the rice cooker’s inner pot, and place Onion and Pork.

Rinse Rice, drain well, and spread over the Onion and Pork. Scatter Carrot over the Rice.

Season Chicken Stock with Salt & White Pepper strongly, add Sake and Soy Sauce, and pour the mixture over the Rice, but DO NOT stir.

Press Cook/Start button to start cooking. When the rice is cooked, pour Eggs over the Rice, add Peas, then close the lid and allow it to get steamed for 10 minutes.

After 10 minutes, Egg should be cooked. Add chopped Spring Onion, and mix to combine. Add extra Salt and White Pepper if required.

Ham is often used for Fried Rice. Many people add Egg, Carrot and Peas, and the Fried Rice turns very colourful. I tried to make a similar rice dish using my rice cooker. Place everything in the rice cooker’s inner pot and press the start button. Super easy, energy efficient, delicious and nutritious.

Ingredient

1/2 cup

Corn Kernels

1 tablespoon (15 g)

Butter *cut into small cubes

Cooking instructions

* Step 1

Place Smoked Ham pieces and Onion in Rice Cooker’s inner pot.

Wash Rice and drain, and spread over the Ham. Scatter Carrot and Corn Kernels.

If Chicken Stock is not salted, season with Salt. Add the Chicken Stock and Sake (Rice Wine) to the pot, but DO NOT stir. Scatter Butter on top. Add some ground Pepper.

Press ‘COOK’ button to start cooking. When cooked, add Peas (OR Edamame Beans), and let it steamed for 10 minutes. Then loosen and mix gently.

Taste the rice, add a little bit of Soy Sauce OR extra Salt and Pepper as required, and mix to combine. *Note: You can add some finely chopped Parsley OR Spring Onion to serve.

5 . Gochujang Chicken Rice

Gochujang Chicken Rice

This is a Korean inspired ‘Takikomigohan’, that is a Japanese dish of Rice cooked with all other ingredients and seasonings. This ‘Gochujang Chicken Rice’ is absolutely easy to cook if you have a rice cooker. I can’t live without rice cooker. It makes everyday cooking so much easier. While Gochujang Chicken Rice is cooking, make a soup and a refreshing salad. A delicious meal can be prepared without no effort.

Ingredient

1 tablespoon

Sugar

2 tablespoons

Soy Sauce

1 tablespoon

Sake (Rice Wine)

1 teaspoons

Sesame Oil

Cooking instructions

* Step 1

Place all the Soup ingredients in a measuring jug OR bowl, and mix well.

* Step 2

Place Chicken pieces in rice cooker’s inner pot.

Wash Rice, drain well, and spread over the Chicken.

Scatter Onion and Garlic. Gently pour the Soup over, but DO NOT stir.

Press the Cook/Start button. When the rice is cooked, let it steamed for 10 minutes, then gently mix.

Sprinkle with some finely chopped Spring Onion and toasted Sesame Seeds, and serve. *Note: Some shredded Toasted Nori is also nice to add.
