Mackerel is my favourite fish and I particularly love John West’s canned Mackerel in Brine. Anything with the Mackerel in it is delicious to me, though my husband says it smells fishy. So I cooked this Mackerel Fried Rice just for me. This is a very simple fried rice, quick and easy, and absolutely delicious. If you have cooked fresh Mackerel fillets, that would be even better.

Ingredient

1/4 teaspoon

Cooking instructions

* Step 1

Prepare everything before you started cooking.

* Step 2

Heat Oil and Garlic in a frying pan over medium high heat. When aromatic, add Egg, then add Rice and Spring Onion, and stir to combine.

* Step 3

Season with Salt and White Pepper, add Mackerel, and mix to combine. Add a small amount of Soy Sauce, and mix well.

Soy Beans & Tuna Mayo Salad

I made this salad based on my ‘Tuna Mayo & Mixed Beans Salad’ replacing Mixed Beans with Boiled Soy Beans and Corn Kernels. The mixture of Tuna and Mayonnaise goes well with anything, but I like to mix it with crunchy Vegetables. Crunchy Boiled Soy Beans are perfect.

Ingredient

2-3 tablespoons

Japanese Mayonnaise

Cooking instructions

* Step 1

Place Cucumber, Red Onion, Boiled Soy Beans and Corn Kernels in a mixing bowl. Season with Salt and Black Pepper. Freshly ground Black Pepper is the best.

* Step 2

Add Tuna, Japanese Mayonnaise and Soy Sauce, and mix to combine. Taste it, you might need to add extra Salt & Black Pepper, OR extra Soy Sauce.

Chicken Piccata with Gochujang Mayo Sauce

Until recently, I didn’t know Chicken Piccata in the western countries is served in a sauce made with Lemon Juice, Butter, and Capers. ‘Piccata’ in Japan means a method to cook Chicken, Meat OR other ingredients, that are coated with Egg, then pan-fried. In the Japanese style, ‘Chicken Piccata’ can be served with any sauces you like. Today I served with Gochujang Mayo Sauce.

Ingredient

4 tablespoons

Plain Flour

Egg

4 tablespoons

Japanese Mayonnaise

Cooking instructions

* Step 1

Combine all the Sauce ingredients in a small bowl. You may wish to add Chilli Sauce such as Sriracha to make the sauce more spicy.

* Step 2

Slice Chicken Breast Fillets in half and use a meat mallet to pound the thick parts and make them even thickness. Season with Salt & Pepper.

* Step 3

Coat the Chicken pieces with Flour, then coat with Egg thinly. 1 Egg should be enough for 4 pieces of Chicken.

* Step 4

Heat Oil in a large frying pan over medium low heat, cook Chicken, in batches, until nicely browned and cooked though. Add extra Oil if required.

* Step 5

Drizzle the sauce over the cooked Chicken, sprinkle with finely chopped Spring Onion, and serve.

4 . Gochujang Mayo Sauce

Japanese Mayonnaise has perfect flavour that goes well with many salty sauces. Mix Gochujang (Korean Spicy Miso), that is sweet, spicy, salty and packed with Umami, with it and you can make this delicious sauce instantly. This sauce is great with Chicken, Meat, Fish and Vegetables. Adding extra ingredients such as Vinegar, Sugar OR Sesame Oil, you can create your own salad dressing or dipping sauce.

Ingredient

4 tablespoons

Cooking instructions

* Step 1

Combine all ingredients. Alter the amount of Soy Sauce to suit your taste, OR depending on what to use it for.

* Step 2

*Note: Add Rice Vinegar, Sugar, Sesame Oil OR Chilli Sauce such as Sriracha and create your own salad dressing OR dipping sauce.

The mixture of Canned Tuna, Japanese Mayonnaise and a little bit of Soy Sauce is delicious, and it can be used for a variety of dishes, particularly for salads. I often mix Edamame Beans (young Soy Beans) with it, but today I added Canned Mixed Beans as well. It turned out a delicious and nutritious salad. And it didn’t cost me much.

Ingredient

2-3 tablespoons

Japanese Mayonnaise

1 can (400 g)

Mixed Beans *drained

Cooking instructions

* Step 1

Place Cucumber, Red Onion and Edamame Beans in a mixing bowl. Season with Salt and Black Pepper. Freshly ground Black Pepper is the best.

* Step 2

Add Tuna, Japanese Mayonnaise and Soy Sauce, and mix to combine. Taste it, you might need to add extra Salt & Black Pepper.

* Step 3

Add drained Mixed Beans and combine.
