If you are looking for a healthy and refreshing soup for your Ramen Noodles, you may want to try this one. The main ingredients are Prawns, Tomato and Iceberg Lettuce. With Ramen Noodles in hot soup? Yes. It’s quick and easy to prepare, very filling, and healthy and satisfying.

* Step 1

Place Chicken Stock, Sake (Rice Wine) and Garlic in a saucepan, and bring to the boil. Season with Salt and White Pepper. *Note: You may wish to season with Soy Sauce OR Fish Sauce, etc.

* Step 2

Meanwhile, cook Ramen Noodles according to the instruction on the package.

* Step 3

Add Prawns to the boiling soup. When the Prawns changed colour, add Tomato and Lettuce, and bring back to the boil. And it’s done.

* Step 4

Place some soup in a bowl, add drained Ramen Noodles, and cover with the remaining Soup. Add some Spring Onion and Crispy Chilli Oil, and enjoy.

Mock ‘Tonkotsu’ Ramen Soup

Ramen has become very popular in Melbourne where I live. It seems ‘Tonkotsu’ Ramen is the most popular one. To make the ‘Tonkotsu’ Ramen Soup, you need to boil the Pork Bones for a long time. This Mock ‘Tonkotsu’ Ramen Soup is quick & easy and tastes good. If you use plant-based Stock and Milk, it can be vegan.

Ingredient

1 teaspoon

Sesame Oil

1/2 teaspoon

grated Garlic

1/2 teaspoon

grated Ginger

1 tablespoon

Soy Sauce

1/4 cup

Milk

Cooking instructions

* Step 1

Place all the Sauce ingredients in a saucepan, bring to the boil, and stir well. Alter the amount of Salt.

* Step 2

Meanwhile, cook Ramen Noodles according to the instruction on the package.

* Step 3

Place the soup in a bowl, add drained Ramen Noodles, and place your favourite toppings. Sprinkle with some Toasted Sesame Seeds and enjoy.

Spicy Stewed Pork with Tomatoes

This dish is a simple version of my ‘Pork, Chorizo & Black Bean Stew’, but I didn’t add Black Beans because I wanted to serve it with ‘Cuban Inspired Black Bean Rice’. This dish is absolutely easy to cook. Alter the amount of Ground Chilli to suit your taste. I added 1/4 teaspoon and it was just right for me.

Ingredient

1 teaspoon

Ground Cumin

1 teaspoon

Ground Paprika

1 can (400 g)

Diced Tomatoes

Cooking instructions

* Step 1

Cut Pork into bite-size pieces. Prepare Onion and Garlic. Heat Oil in a pot over medium heat, cook Pork until nicely browned. Add Onion and Garlic, and stir for a few minutes, then add all spices and stir.

* Step 2

Add canned Tomatoes, Chicken Stock (OR Stock of your choice) and Bay Leaf, cover with a lid, and simmer over low heat for 30 minutes.

* Step 3

Remove the lid, season with Salt & Black Pepper, and simmer until the sauce is thickened.

* Step 4

Serve with freshly cooked Rice. Today I served with ‘Cuban Inspired Black Bean Rice’

4 . Rice Cooker Fried Rice

Well… this dish is not fried, so I shouldn’t name it Fried Rice, but it is almost the same as typical Fried Rice. It is extremely easy to prepare if you have a rice cooker. You don’t need to stand in front of hot cooktop. Place everything in the rice cooker’s inner pot and press the button to start cooking. Add whisked Egg at the end when rice is cooked. While the rice cooker is cooking this dish, you can make a refreshing salad. Dinner will be ready easily.

Ingredient

1 tablespoon

Sesame Oil

1/4 teaspoon

White Pepper

2 tablespoons

Sake (Rice Wine)

1 tablespoon

Soy Sauce

Cooking instructions

* Step 1

Drizzle Sesame Oil in the rice cooker’s inner pot, and place Onion and Pork.

Rinse Rice, drain well, and spread over the Onion and Pork. Scatter Carrot over the Rice.

Season Chicken Stock with Salt & White Pepper strongly, add Sake and Soy Sauce, and pour the mixture over the Rice, but DO NOT stir.

Press Cook/Start button to start cooking. When the rice is cooked, pour Eggs over the Rice, add Peas, then close the lid and allow it to get steamed for 10 minutes.

After 10 minutes, Egg should be cooked. Add chopped Spring Onion, and mix to combine. Add extra Salt and White Pepper if required.

5 . Capsicum, Corn & Black Bean Rice

Capsicum, Corn & Black Bean Rice

This is a Mexican inspired rice dish, but I cooked it in the Japanese ‘Takikomigohan’ method. ‘Takikomigohan’ is a dish of Rice that is cooked with other ingredients and seasonings all together. Using a rice cooker, it is super easy. I placed Onion, Garlic and Capsicum in the pot first, so that they get slightly caramelised. Basically what you have to do is to place everything in the pot and press the start button. If you use different Spices OR Herbs, this dish can be in Mediterranean, Indian, OR any flavour.

Ingredient

1 teaspoon

Ground Cumin

1/4 teaspoon

Ground Chilli

1/2 cup

Corn Kernels

Cooking instructions

* Step 1

Drizzle Olive Oil in the rice cooker’s inner pot, and place Onion and Garlic. Then add Capsicum.

Rinse Rice, drain well, and spread over the vegetables.

Mix Chicken Stock (OR Stock of your choice) and Tomato Paste, and pour the mixture over the Rice. Add Spices and Salt (and Herbs), but DO NOT stir.

Spread Corn Kernels and drained Black Beans on top, and press Cook/Start button to start cooking.

When the rice is cooked and steamed, gently mix to combine. Add Salt and Pepper if required. Sprinkle with some chopped Spring Onion (OR Coriander Leaves, Parsley, etc.) and serve.
