1 . Shakshouka

‘Shakshuka’ has become so popular and I don’t need to explain what it is, but it is a North African and Middle Eastern dish of Eggs cooked in Tomato based sauce. It is easy to cook and you don’t need to spend a lot of money at restaurants. This recipe is for 1 serving. It would be easy to multiply the recipe to cook more than 2 servings.

Ingredient

1/2 tablespoon

Olive Oil

1/2 teaspoon

Paprika

1/4 teaspoon

Cumin

1-2

Eggs

Cooking instructions

* Step 1

Leave the Egg(s) at room temperature, so that Egg(s) will be cooked more quickly.

* Step 2

Cut all vegetables finely OR into small pieces. You can thinly slice them if you prefer.

* Step 3

Heat Olive Oil in a frying pan over medium heat, cook vegetables until soft and slightly caramelised. Add the spices and stir.

* Step 4

Add Tomatoes and bring to the simmer stirring occasionally. Season with Salt & Pepper, and mix well. Add Egg(s), cover with a lid if you want to do so, and simmer until the Egg(s) are very softly cooked.

* Step 5

Sprinkle with some chopped Coriander OR Parsley, some extra Pepper, and enjoy with nice crusty bread.

I use Lamb Chops for this Curry, but you can use boneless Lamb meat that is easy to eat. If you love Curry, you probably have a collection of Spices. Please use your own blend of Spices, but I use Japanese S&B Curry Powder. I use 1 tablespoon only, and the flavour is mild and children can enjoy it. Add more Spices if you like stronger flavour.

Ingredient

1 tablespoon

Oil *plus extra

1 tablespoon

Plain Flour

1 can (400 g)

Diced Tomatoes

Cooking instructions

* Step 1

Season Lamb Chops with Salt and Pepper.

* Step 2

Heat Oil in a large frying pan OR thick-base pot over high heat, brown the Lamb Chops, transfer to a plate, and set aside.

* Step 3

There should be enough Oil in the pan, but add some more if required. Lower the heat, and cook Onion and Garlic. When Onion is cooked, add Ginger, Curry Powder and Flour, and stir.

* Step 4

Add Tomatoes, Chicken Stock, Carrot, browned Lamb Chops and Bay Leaf. Bring to the boil, then lower the heat, cover with a lid, and simmer for 40 to 50 minutes, occasionally stirring.

* Step 5

Remove the lid and season with Salt. Add Garam Masala and Fruit Chutney if you add any. When the sauce is thickened, it’s ready. *Note: You may wish to add Ground Chilli for extra heat.

* Step 6

Serve with freshly cooked Rice. I served with Saffron Basmati Rice today. Turmeric Rice is also recommended.

Cuban Inspired Black Bean Rice

This recipe has been inspired by a Cuban rice dish, ‘Arroz Congri’. I cooked it in my rice cooker just like Japanese ‘Takikomigohan’, so it is super easy to cook. The colour of the dish is supposed to be darker, but the liquid from the can of Black Beans that I used was not really black. If you cook Dry Black Beans from scratch, make sure you save the black water and use it to cook Rice. You can add Bacon. See the photo below.

Ingredient

1 can (400 g)

Black Beans

1 teaspoon

Ground Cumin

1 teaspoon

Ground Paprika

2 teaspoons

Dried Oregano

2 cups (180 ml)

cup) Long Grain Rice

Cooking instructions

* Step 1

Drain canned Black Beans and save the black liquid in a measuring jug. Add Water to make 450ml in total. Add Salt to the liquid and season it. *Note: If you cooked Dry Black Beans from scratch, use the black water.

* Step 2

Heat Olive Oil in a frying pan, cook Onion and Garlic until soft, then add Capsicum and all spices, and mix well. Set aside and cool. *Note: Capsicum doesn’t need to be soft.

* Step 3

*Optional Bacon: If you prefer, you can add 100g Bacon. Cut into small pieces and cook with Vegetables. As Bacon is salty, you need to alter the amount of Salt in ‘Step 1’. *Note: See the photo below.

* Step 4

Wash Rice, drain, and place in rice cooker’s inner pot. Add the black water mixture, spread the stir-fried Vegetables and drained Black Beans, but DO NOT stir. Add Bay Leaf, and press COOK/START button to start cooking.

* Step 5

When the Rice is cooked and steamed, gently mix to combine. *Note: Add extra Salt if required. 1-2 tablespoon Lemon Juice can be added.

This Ukrainian inspired delicious Mushroom Sauce is great with Chicken, Pork, Beef, Pasta, Savoury Pancakes, Rice, Bread, and many other things. It is absolutely easy to make and delicious.

Ingredient

Cooking instructions

* Step 1

Heat Olive Oil (OR Butter) in a frying pan over medium heat, cook Onion and Garlic, then add Mushrooms. Stir for a few minutes until softened.

* Step 2

Add Sour Cream, season with Salt & Pepper, and stir for a minute. Finally add Dill (OR other Herb) and combine.

I have been terribly disturbed by the news about the unthinkable crisis in Ukraine. Today I cooked this Ukrainian inspired dish as I prayed for the people in Ukraine. May peace return to them very soon.

Ingredient

Egg

Salt

1 tablespoon

Olive Oil OR Butter

Cooking instructions

* Step 1

To make Mushroom Sauce, heat Olive Oil (OR Butter) in a frying pan over medium heat, cook Onion and Garlic, then add Mushrooms. Stir for a few minutes until softened.

* Step 2

Add Sour Cream, season with Salt & Pepper, and stir for a minute. Finally add Dill (OR other Herb) and combine.

* Step 3

Place Chicken Mince and other ingredients in a large bowl and mix until well combined. Divide into 8 portions, roll into balls, and flatten into rounds or oblongs.

* Step 4

Heat a small amount of Oil in a frying pan and cook until both sides are nicely browned and cooked though.

* Step 5

Spoon some Mushroom Sauce over the cooked Chicken Patties and serve. Today I served with some steamed Vegetables and pan-fried Potato.
