I had just 1 stalk of Rhubarb and wondered what I could make with it. I thought it would be enough for a mug cake. Then I sliced it and added to my ‘Instant Mug Cake’ with 1 pinch Salt. It was a bit sour. I could have added more Sugar, but I enjoyed it with ‘Rhubarb Sauce’ and Cream. I took 5 minutes for me to make it.

Ingredient

2 tablespoons

Caster Sugar

1 pinch

Salt

4 tablespoons (1/4 cup)

Self-Raising Flour

Cooking instructions

* Step 1

Place Butter in a mug, microwave for 20-30 seconds OR until Butter melts.

* Step 2

Add Sugar and Salt, mix well, add Egg, and mix well. Add Self-Raising Flour and mix until smooth.

* Step 3

Add sliced Rhubarb, mix to combine, and microwave for 1 to 1 & 1/2 minutes OR until cooked. *Note: Try not to over-cook it as the cake turns very dry. I used 1000W microwave and 1 & 1/2 minutes was a little too long.

* Step 4

Enjoy with some Rhubarb Sauce OR Jam. I added some Thickened Cream as well.

Mug Cakes are easy to make if you have a microwave. Based on my ‘Instant Mug Cake’ recipe, I made Apple Mug Cake the other day. The result was not satisfactory. I should have peeled the Apple. I used only 1/2 Apple but it was not enough. And the cake was drier than I expected. I alter the recipe and method. Now I can share the recipe with you. When you crave Apple Cake, this can be an alternative.

Ingredient

1 tablespoon (15 g)

Butter *1 tablespoon is 15ml

2 tablespoons

Sugar

1

Egg

3 tablespoons

Self-Raising Flour

1 tablespoon

Sultanas *optional

Cooking instructions

* Step 1

Place Butter in a mug. Peel Apple, cut into small thin pieces, add to the mug, and microwave for 1 minute. Stir and microwave again for 1 more minute. *Note: I used 1000W microwave.

Add Sugar and mix well. The volume of Apple is now reduced, Apple is softened, and some juice has come out.

Add Egg, stir well, then add Self-Raising Flour and some Ground Cinnamon, and mix well until smooth. You may wish to add Sultanas.

Microwave for 1 to 1 & 1/2 minutes OR until cooked. I cooked for 1 minute and 20 seconds in 1000W microwave. *Note: The cake rises high but it will shrink.

Add some extra Ground Cinnamon if you like it, and enjoy with Sour Cream, Thickened Cream OR Vanilla Ice Cream, etc.

I bought a jar of Sweet Chestnut Paste (Chestnut Cream) to make ‘Mont Blanc Cake’, and there was a little bit leftover that I needed to use up. This is the easiest cake that I can make using it. If you have a microwave, this mug cake can be made in 5 minutes.

Ingredient

1 teaspoon

Rum

4 tablespoons

Sweet Chestnut Paste

4 tablespoons

Self-Raising Flour

Cooking instructions

* Step 1

Place Butter in a mug, microwave for 20-30 seconds OR until Butter melts.

* Step 2

Add Rum, Egg (OR Milk) and Sweet Chestnut Paste, and mix well. Then add Self-Raising Flour and mix until smooth. *Note: Depending on the sweetness of the Chestnut Paste, you might need to add Sugar.

Microwave for 1 to 1 & 1/2 minutes OR until cooked. I recommend to enjoy it with Cream. *Note: Try not to over-cook it as the cake turns very dry. I used 1000W microwave and 1 & 1/2 minutes was a little too long.

*Note: This cake batter overflows my 380ml mug slightly. I recommend to use a larger mug OR place a plate underneath the mug when you cook it.

When I miss ‘Wagashi’, I cook ‘Tsubu-an’ (Sweet Azuki Paste), which is a very popular ingredient for Japanese sweets. I want to share a super quick and easy cake you can make using ‘Taubu-an’ (Sweet Azuki Paste). It satisfies my craving and it takes only a few minutes to make.

Ingredient

2-3 tablespoons

Milk *OR 1 Egg

4 tablespoons

Self-Raising Flour

Cooking instructions

* Step 1

Place Butter in a mug, microwave for 20-30 seconds OR until Butter melts.

* Step 2

Add Milk (OR Egg), Tsubu-an (Sweet Azuki Paste) and Self-Raising Flour, and mix well.

* Step 3

Microwave for 1 to 1 & 1/2 minutes OR until cooked. I recommend to enjoy it with Cream. *Note: Try not to over-cook it as the cake turns very dry.

Last night, I really wanted to eat a lemony sweet. But I was too tired to make anything. Then, I decided to make ‘Instant Mug Cake’ that is super quick and easy. I poured a mixture of Lemon Juice and Sugar over it. It didn’t take 5 minutes to make it. But this lemony mug cake satisfied my craving. I made it again today. I used a lot of Sugar for one mug cake, but I needed it because of the sourness of Lemon.

Ingredient

1-2 tablespoons

Caster Sugar

Egg

4 tablespoons

Self-Raising Flour

1-2 tablespoons

Lemon Juice

Cooking instructions

* Step 1

In a small bowl, combine Lemon Juice and Caster Sugar.

* Step 2

Place Butter in a mug, microwave for 20-30 seconds OR until Butter melts. Add Sugar and mix well.

* Step 3

Add Egg and mix well, then add Flour and mix well until smooth.

Microwave for 1 to 1 & 1/2 minutes OR until cooked. Gently pour Lemon Syrup over the hot cake and wait for a few minutes, and enjoy.
