The other day, I cooked ‘Stir-fried Harusame with Prawns & Lettuce’ without rehydrating Dry Harusame Noodles, and it worked very well. So, I cooked this dish in the same method. It is basically stir-fried Pork Mince and Vegetables. After I seasoned the stir-fry, I added Sauce and Dry Harusame Noodles to the pan. It didn’t take long for Dry Harusame Noodles to get soft. This dish can be enjoyed with Rice, OR as a noodle dish.

Ingredient

1/2 tablespoon

Sesame Oil

1 tablespoons

Soy Sauce

1 tablespoons

Oyster Sauce

1 tablespoons

Mirin

Cooking instructions

* Step 1

Combine all the Sauce ingredients in a bowl OR measuring jug. If Chicken Stock is not salted, add some Salt to suit your taste.

* Step 2

Heat Sesame Oil in a frying pan, cook Pork Mince. When cooked, add vegetables, and stir until vegetables are cooked. Season with Salt & Pepper (OR Chilli).

* Step 3

Add the Sauce. Tilt the pan and cook Harusame Noodles in the Sauce, turning and stirring. When Harusame Noodles become soft and transparent, mix to combine.

* Step 4

Sprinkle with finely chopped Spring Onion and serve.

Here is another simple Harusame Soup for you to try. It’s super quick and easy to prepare. First you make the soup. You can season it as spicy as you want. Today I added 1 & 1/2 teaspoons Toban Djan (Chilli Bean Sauce) and some Rāyu (Chilli Oil), and it was quite hot and still enjoyable for me. You may wish to add more.

Ingredient

1/2 teaspoon

grated Ginger

1 teaspoon

Soy Sauce

1 teaspoon

Oyster Sauce

1/2 teaspoon

Sesame Oil

Cooking instructions

* Step 1

Prepare all ingredients before you start cooking.

* Step 2

Heat Chicken Stock in a saucepan, add other Soup ingredients except Salt, and bring to the boil. Taste it, and add some Salt if required. Today I didn’t add Salt.

* Step 3

Add Pork to the boiling Soup. When colour has changed, add Dry Harusame Noodles and Spring Onion, and cook until the noodles are soft. It won’t take long.

Add some Rāyu (Chilli Oil) for extra heat, and enjoy.

A quick, easy and healthy dish, that’s what I want to cook for my lunch. I cook Harusame Soup very often, because it is absolutely ‘quick, easy and healthy’. Today I made this Pho Inspired Chicken & Harusame Soup, and it was so good. Dry Harusame Noodles can be cooked in the seasoned soup very quickly. You must prepare everything before you start cooking.

* Step 1

Prepare all ingredients before you start cooking.

* Step 2

Heat Chicken Stock in a saucepan, bring to the boil, and season with Fish Sauce, Salt and White Pepper.

* Step 3

Add Chicken, cover with a lid, and cook for a few minutes. Add Dry Harusame Noodles, and cook until the noodles are soft.

* Step 4

Add some Red Onion, Spring Onion and Coriander on top, squeeze a wedge of Lime (OR Lemon), and enjoy.

I am a big fan of Tom Yum soups, particularly ‘Tom Yum Goong’. I don’t cook it at home as I usually don’t have ingredients such as Lemongrass and Kaffir Lime Leaves. So it is a restaurant food for me, though I often find it too spicy. This is my recipe to make a similar soup using what I always have. And its flavour has been altered to suit my taste, and it is not too spicy. I add Harusame Noodles. The noodles suck up the delicious soup and they make this soup a filling meal.

Ingredient

1 teaspoon

Oil

1 teaspoon

Fish Sauce

1 teaspoon

Soy Sauce

1/2 teaspoon

Sugar

1 tablespoon

Lemon Juice

Leaves

Coriander

Cooking instructions

* Step 1

Heat Oil in a saucepan, and cook Onion, Red Capsicum, Garlic and Ginger. When softened, add Chicken Stock, and bring to the boil.

* Step 2

Add Fish Sauce, Soy Sauce, Toban Djan (Chilli Bean Sauce) and Sugar, and mix well. Taste it, and add some Salt if required. You may wish to add more Toban Djan (Chilli Bean Sauce).

* Step 3

Add Prawns and Harusame Noodles. When noodles are soft and Prawns are cooked, add Lemon juice and stir, and it is done.

Drizzle with some Rāyu (Chilli Oil), add some Coriander Leaves, and enjoy.

This is another super quick & easy soup that you can cook with Dry ‘Harusame’ Noodles, aka ‘Bean Vermicelli’ OR ‘Thread Noodles’. I love to add ‘Harusame’ to soups as it makes the soups more filling and just one bowl of soup can be a meal. Today I added Pearl Barley as well, but already cooked Pearl Barley. It’s so comforting and filling.

Ingredient

1 teaspoon

Soy Sauce

1 teaspoon

Oyster Sauce

1 leaf

Wombok

1 teaspoon

Sesame Oil

Cooking instructions

* Step 1

In a measuring jug OR bowl, combine Chicken Stock, Soy Sauce and Oyster Sauce.

* Step 2

Cut Wombok leaf into 1cm wide pieces, and separate hard white parts and soft parts. Prepare Pork and Spring Onion, and all other ingredients ready to use.

* Step 3

Heat Sesame Oil in a saucepan, and cook Pork and the hard white parts of Wombok. When Pork has changed colour, add the Chicken Stock mixture and Cooked Pearl Barley, and bring to the boil.

* Step 4

Taste the soup, and add Salt & White Pepper as required.

* Step 5

Add Dry ‘Harusame’ Noodles. The noodles will get soft very quickly. Add the soft parts of Wombok and Spring Onion, bring back to the boil, and cook until Wombok and Spring Onion are soft.
