Guess what happens when you add Gelatine Powder to Hot Chocolate and make it into Jelly. I have tried it today and I was amazed. As the Hot Chocolate cooled down, the Chocolate Milk separated into layers. When it was set, there were two different coloured layers of Chocolate Milk Jelly, and another layer was on top. It was soft Chocolate Ganache. This is how I made this accidental delicious dessert.

Ingredient

2 teaspoons

Gelatine Powder

2 tablespoons

Water

2 tablespoons

Cocoa Powder

4 tablespoons

Dark Chocolate Chips

Cooking instructions

* Step 1

Sprinkle Gelatine Powder into Water in a small bowl and soak for 5-10 minutes.

* Step 2

Place 1 cup Milk, Sugar and Cocoa Powder in a saucepan, heat over medium low heat, and whisk until smooth. Remove from heat when it is close to the boil. Add soaked Gelatine, mix well until Gelatine dissolves.

* Step 3

Add Chocolate Chips and whisk until Chocolate Chips melt. Then add remaining cold Milk and Vanilla, and mix well. *Note: You can add 1 teaspoon Brandy as well.

* Step 4

Pour the mixture into serving glasses. Place them in the fridge and leave to set.

Brandy Custard Sauce

This is the essentail sauce for traditional Christmas Pudding, but for grown-ups only. I don’t make this Custard Sauce very sweet as I always serve it with sweet dessert, but you may wish to add extra Sugar. The sauce becomes thicker as it cools. You can make it thinner by adding a little extra Milk.

Ingredient

1/2 teaspoon

Vanilla Extract

2 tablespoons

Brandy

Cooking instructions

* Step 1

Place Milk and Cream in a saucepan, and bring to the simmer. Then remove from heat.

* Step 2

Whisk Egg Yolks, Sugar, Corn Starch and Vanilla in a mixing bowl until creamy, add the heated Milk mixture, and whisk well.

* Step 3

Return the mixture to the saucepan, bring to the boil over low heat, whisking constantly, and cook until the sauce thickens. Add Brandy and whisk to combine well.

*Note: If you want to make the sauce thinner, add extra Milk. The sauce becomes thicker as it cools.

Coconut Milk Agar Jelly

The jellies made with Agar Agar powder (OR Japanese Kanten) have unique crispy texture. I usually make Milk Agar Jelly with regular Milk and Condensed Milk. The other day I used Coconut milk, and the result was fantastic. I am now writing down how I made it. You can add some Fruit to it. See the photos below. The jelly can be set in serving glasses OR jelly moulds. It can be set in a large jelly mould OR a container, and cut into serving sizes.

Ingredient

1 pinch

Salt

1/2 teaspoon

Vanilla Extract

1 cup

Water

Cooking instructions

* Step 1

Place Coconut Milk in a heat-proof measuring jug or bowl, heat in the microwave, and warm it until solidified clumps melted. Add Sugar, Salt and Vanilla extract, and mix well.

* Step 2

Place Water and Agar Agar Powder in a saucepan, mix well, and bring to the boil, stirring occasionally. Once boiling, lower the heat and simmer for 1 minute, then remove from heat.

* Step 3

Add Coconut Milk mixture and mix well using a whisk. Allow it to cool slightly, but do not leave it for too long because this Jelly sets at room temperature.

* Step 4

Pour the jelly mixture into the serving glasses OR jelly mould(s). Leave in the fridge until set. If you add Fruit, cut them into small pieces, and place them in the glasses OR moulds first, then pour the jelly mixture.

A few days ago, I was given a lot of home-grown organic Lemons, and I have been making Lemon desserts. Today I made a simple jelly. When I make jelly using fresh Lemon Juice, I always use Golden Cup Agar Agar Powder to set the jelly. Most Asian grocery stores sell it. This vegetarian dessert is very refreshing. I like it quite sour, but it’s up to your preference. It’s very easy to make, and you only need Agar Agar Powder, Water, Lemon Juice and Sugar.

Ingredient

2 cups (500 ml)

Water

Cooking instructions

* Step 1

Place Water and Agar Agar Powder in a saucepan, and mix well. Bring to the boil over medium heat, stirring frequently. Once boiling, lower the heat and simmer for 1 minute.

* Step 2

Remove from heat, add 4 tablespoons Sugar and 3 tablespoons Lemon Juice, and mix well. Taste it, and add extra Sugar and Lemon Juice to suit your taste.

* Step 3

*Note: Depending on the sourness of the Lemon Juice you use, you need to alter the amount of Sugar and Lemon Juice. Today I added 5 tablespoons Sugar and 4 tablespoons Lemon Juice. Please be aware the taste will become stronger when the jelly is set.

* Step 4

Allow it to cool slightly, but do not leave it for too long because this Jelly sets at room temperature. Pour the jelly mixture into the serving glasses OR jelly moulds. Leave in the fridge until set.

* Step 5

*Note: You may wish to decorate the jelly with fresh Fruit OR whipped Cream. I recommend to serve the jelly with Unsweetened Greek Yoghurt.

Spicy Teriyaki Tofu Rice Bowl

Softer type Tofu is tricky to use for stir-fry dishes. Then you should use Fried Tofu, that is available in a thick slice OR smaller pieces. Deep-fried medium soft Tofu are crunchy outside and softer inside. Today I pan-fried the Fried Tofu and made this rice bowl. Super easy and absolutely delicious. It is vegan, but any meat lovers would enjoy this dish.

Ingredient

2 tablespoons

Soy Sauce

1 tablespoon

Mirin

Cooking instructions

* Step 1

Combine all the Sauce ingredients in a small bowl.

* Step 2

Place Fried Tofu in a large colander, carefully pour boiling water over to remove unwanted oil, pat dry with paper towel. Cut into bite-size pieces if large.

* Step 3

Place Tofu pieces on a plate, sprinkle Potato Starch (OR Corn Starch) and lightly coat Tofu pieces. This layer of Starch will thicken the sauce.

* Step 4

Heat Sesame Oil in a frying pan over medium heat, and cook Tofu pieces until lightly browned. Add the Sauce and stir for 1 minute OR until the sauce thickens.

* Step 5

Half fill a bowl with warm Cooked Rice, cover with Nori pieces over, place Tofu on top, add some Spring Onion and Toasted Sesame Seeds, and enjoy.
