You might have no idea how this dish would taste like. Toasted Nori is not only for Sushi Rolls. Nori is basically a sea plant and you can use it for many dishes. This humble dish of Nori & Spaghetti is cooked with ‘Garlic, Butter and Soy Sauce’. I think it is absolutely delicious.

Ingredient

10 g

Butter

1/4 teaspoon

Dashi Powder

Cooking instructions

* Step 1

Cook Spaghetti in boiling salted water according to the instruction on the package.

* Step 2

When Spaghetti are almost cooked, melt Butter in a frying pan over medium heat, and cook Garlic. When aromatic, add 1/2 cup Salted Water that is cooking Spaghetti.

* Step 3

Add Dashi Powder, Soy Sauce, Chilli Flakes (if you add any) and Toasted Nori, and stir. Drain Spaghetti, add to the pan, and stir until the sauce thickens.

* Step 4

Add some finely chopped Spring Onion and Shichimi (Japanese Chilli Spice Mix), and enjoy.

The combination of ‘Kimchi’ and ‘Takuan’ (Japanese Pickled Daikon) is very popular. ‘Kimu-Taku’ Rice is an example that you can cook with them. Today I made this ‘Mazegohan’ using a can of Mackerel. ‘Mazegohan’ is a Japanese dish of Rice. Rice and other ingredients are cooked separately and mixed together after they are cooked. However, you don’t need to cook anything to make this dish if you have already cooked Rice. Just mix everything together. This messy looking dish is actually really yummy.

Ingredient

2 tablespoons

Kimchi

1 teaspoon

Sesame Oil

Cooking instructions

* Step 1

Cut ‘Takuan’ (Pickled Daikon) into small pieces OR strips. Cut Kimchi into smaller pieces if large.

* Step 2

Place drained Mackerel, ‘Takuan’, Kimchi, Sesame Oil and Sesame Seeds in a mixing bowl, add Soy Sauce and mix well.

* Step 3

Add Spring Onion, warm Cooked Rice and Nori, and roughly mix to combine.

Today I was going to cook ‘Stir-fried Iceberg Lettuce & Egg’ with a sauce made with Gochujang (Korean Spicy Miso). However, the weather was hot and I wanted to make something easier. Then I decided to make a salad instead of stir-fry. I cooked Eggs and it didn’t take long at all, then I combined everything in a mixing bowl. I added Toasted Nori, and it was a good idea. The salad was delicious and I enjoyed it very much.

Ingredient

1 tablespoon

Oil

1 pinch

Salt

1/2 teaspoon

Sugar

1 tablespoon

Toasted Sesame Seeds

1 tablespoon

Sesame Oil

Cooking instructions

* Step 1

Whisk Eggs in a small bowl and lightly season with Salt & White Pepper.

* Step 2

Heat Oil in a frying pan over hight heat, cook Eggs quickly just like cooking ‘Scrambled Egg’. Transfer to a plate.

* Step 3

Combine all the Sesame Dressing ingredients in a mixing bowl. Alter the amount of Gochujang.

* Step 4

Tear Lettuce into chunky bite-size pieces, place into the bowl, add 1 pinch Salt, and mix to combine. Add the cooked Egg, Spring Onion and Nori, and mix to combine.

* Step 5

Sprinkle the saved Spring Onion on top and serve immediately.

‘Yakiniku’ Sauce is a dipping sauce for Japanese style BBQ. My family’s ‘Yakiniku’ Sauce is very versatile and can be used as a seasoning sauce for many dishes. It goes very well with Avocado and Tofu as well. This is a healthy and very nutritious ‘Hiyayakko’, a Japanese dish of cold Tofu. You don’t like Tofu? Try this one. I am confident you will enjoy it.

Ingredient

1/2 teaspoon

grated Garlic

1/2 teaspoon

grated Ginger

1/2 teaspoon

Sugar

1 tablespoon

Soy Sauce

Cooking instructions

* Step 1

Combine all the Yakiniku Sauce ingredients in a mixing bowl. Add Avocado and Spring Onion, and mix to combine.

* Step 2

Remove excess water from Tofu, place in serving bowl OR plate, cover with the Avocado mixture.

* Step 3

Add Toasted Nori on top and enjoy. Drizzle with extra Soy Sauce if required.

Softer type Tofu is tricky to use for stir-fry dishes. Then you should use Fried Tofu, that is available in a thick slice OR smaller pieces. Deep-fried medium soft Tofu are crunchy outside and softer inside. Today I pan-fried the Fried Tofu and made this rice bowl. Super easy and absolutely delicious. It is vegan, but any meat lovers would enjoy this dish.

Ingredient

2 tablespoons

Soy Sauce

1 tablespoon

Mirin

Cooking instructions

* Step 1

Combine all the Sauce ingredients in a small bowl.

* Step 2

Place Fried Tofu in a large colander, carefully pour boiling water over to remove unwanted oil, pat dry with paper towel. Cut into bite-size pieces if large.

* Step 3

Place Tofu pieces on a plate, sprinkle Potato Starch (OR Corn Starch) and lightly coat Tofu pieces. This layer of Starch will thicken the sauce.

* Step 4

Heat Sesame Oil in a frying pan over medium heat, and cook Tofu pieces until lightly browned. Add the Sauce and stir for 1 minute OR until the sauce thickens.

* Step 5

Half fill a bowl with warm Cooked Rice, cover with Nori pieces over, place Tofu on top, add some Spring Onion and Toasted Sesame Seeds, and enjoy.
