It’s January now. In Melbourne where I live, it is summer and supposed to be hot, but it’s been cold last few days. I wanted to cook something warm and comforting today. So, I decided to bake this Chicken Pot Pie. Shortcrust Pastry is not hard to make, but you may prefer using store-bought Pastry. I prefer Shortcrust Pastry, but Puff Pastry can be used.

Ingredient

Butter

2 tablespoons

Plain Flour

1/2 cup

Milk

1 pinch

Salt

Cooking instructions

* Step 1

Cut all Vegetables into small pieces, cut Chicken Fillets into small bite-size pieces.

* Step 2

Heat Oil in a large frying pan OR pot, cook Chicken and all Vegetables, except for Peas and Corn, until cooked. Vegetables don’t need to be absolutely soft.

* Step 3

Add Butter, then add Flour, and stir to combine. Add Chicken Stock and Milk, stir until thickened, and add Peas and Corn, and mix to combine. Set aside and cool. *Note: The mixture must be thick. If it is watery, add Corn Starch mixed with Water OR Milk, and cook until it is thick.

* Step 4

To make Shortcrust Pastry, place Flour and Salt in a large bowl, add Butter and rub in with fingertips until the mixture resembles breadcrumbs. Add Egg (OR COLD Water) and mix to combine. *Note: This process can be done using a food processor.

* Step 5

Knead the dough gently on a lightly floured surface and shape into a disc. If it is too soft to work with, leave it in the fridge until firm.

* Step 6

Fill a pie dish with cooled Chicken mixture.

Roll the Shortcrust Pastry to the size larger than the pie dish, cover the Chicken mixture, and trim off the pastry. You may wish to make a pattern on the edges. Make some cuts in the pastry and brush with the saved Egg.

Place the pie dish on a baking tray and bake for 35 to 40 minutes OR until nicely browned and cooked through. If it is getting dark too quickly, lower the heat.

My ‘Basic Butter Cake’ is very versatile and you can add a variety of flavours. Today I added Coffee, so this is actually coffee flavoured cake. I also added Cinnamon Crumble made with Walnuts. You can add Cocoa Powder instead of Coffee. Walnuts can be replaced with Pecans OR Almonds. Coffee lovers would love this cake.

Ingredient

3/4 cup

Caster Sugar

1 pinch

Salt

1 teaspoon

Vanilla Extract

1 teaspoon

Ground Cinnamon

Cooking instructions

* Step 1

Make Walnut Cinnamon Crumble first. Finely chop up Walnuts, place in a bowl, add Brown Sugar, Salt and Ground Cinnamon, mix to combine. Add melted Butter, mix well, then add Flour, and mix to form crumble. *Note: Add extra Flour if required.

* Step 2

Preheat oven to 170°C. Line the base and sides of a cake tin with baking paper.

* Step 3

Beat the softened Butter in a mixing bowl with a whisk until smooth. Add Sugar, Salt and Vanilla Extract, and beat until creamy. Add Eggs, one at a time, beating well after each addition.

* Step 4

Add Coffee mixture, Buttermilk and Self-Raising Flour, and mix well. Spoon the batter into the tin, spread evenly, and smooth the surface.

Scatter the Walnut Cinnamon Crumble evenly, and gently press down only slightly.

Bake for 30 minutes or until cooked through. Transfer to a wire rack and cool. Serve warm OR cold.

3 . Chickpea Gnocchi

I don’t make Gnocchi very often, but homemade Gnocchi are delicious. Potato Gnocchi are most popular, but Sweet Potato, Pumpkin and other vegetables are often used. Have you ever tried Chickpeas? Using a can of Chickpeas, these Gnocchi are easy to make. The hardest part is blending the Chickpeas into paste. If you have a stick blender, it would be very easy.

* Step 1

Place drained Chickpeas and Egg in a bowl, and use a stick blender to make into paste. *Note: You may prefer using a food processor if you have one.

Add Plain Flour and Potato Starch (OR Corn Starch), and use a fork to mix and form a soft dough adding extra Flour as required. Today I added extra 1 tablespoon. *Note: Do not make the dough very firm.

Turn onto a lightly floured surface and divide the dough into some portions. Roll each portion into a log about 2cm in diameter, and cut into 1.5cm pieces.

Note: To shape the Gnocchi, today I rolled each piece into a ball, then gently pressed it down on a fork as rolled it. You can just roll over each ball using a fork.

Cook Gnocchi in a saucepan of boiling salted water, but DO NOT overcrowd as they can stick together. Cook until they rise to the surface. Enjoy with your favourite sauce.

Very Crunchy Kara-age Chicken Tenderloins

A few weeks ago, I was preparing Chicken Tenderloins for dinner, but I was not yet sure how I would cook them. I took out ‘Panko’ Breadcrumbs to make Crumbed Chicken, but I changed my mind and decided to make them into ‘Kara-age’, Japanese style fried Chicken. I marinated the Chicken, I didn’t need ‘Panko’ any more, but I happened to add it to the marinating Chicken. The Chicken tuned out very crunchy. It became another recipe.

Ingredient

2 tablespoons

Soy Sauce

2 tablespoons

Sake (Rice Wine)

Cooking instructions

* Step 1

Combine all the Marinade ingredients in a bowl, add Chicken Tenderloins, massage, and set aside for 5-10 minutes.

* Step 2

Add ‘Panko’ Breadcrumbs and Plain Flour to the Chicken and mix to combine. If the coating is too wet and sticky, add extra Flour. Coat Chicken Tenderloins evenly using all the batter that is rather a dry dough.

* Step 3

Heat oil to 170 to 180℃ and fry a few Chicken Tenderloins for 3-4 minutes OR until nicely browned and crunchy. Place on a rack and drain the oil. Repeat with remaining Chicken Tenderloins.

Ukrainian Dumplings with Bacon & Mushrooms

I often cook similar dishes using Gnocchi. ‘Gnocchi & Mushrooms In Butter Soy Sauce’ is my favourite. However, Gnocchi is not so quick & easy to make as Boiled Potatoes are the main ingredient. These Ukrainian Dumplings have harder texture than Gnocchi as they are made without Potato, and Dumplings are much easier and quicker to make.

Ingredient

Butter

Cooking instructions

* Step 1

To make Dumplings, combine Flour and Salt in a mixing bowl, add warm Water, Egg and Butter, and stir to combine. Knead, adding extra Flour as required, and form a dough that is soft but not sticky.

* Step 2

Divide the dough into four portions on a floured surface, roll each portion into a log in the thickness of your choice, then cut into bite-size pieces. *Note: You can divide the dough into two portions and make the logs thicker, and cut them into thinner pieces.

Prepare all other ingredients.

* Step 4

Heat Oil in a frying pan over medium heat, cook Onion and Mushrooms, then add Bacon and Garlic, and stir until everything is cooked and nicely browned.

* Step 5

Meanwhile, cook Dumplings in rapidly boiling salted water in a large saucepan. Once Dumplings float, keep cooking for a few minutes. If you like them softly cooked, cook a little longer.

* Step 6

When Vegetables and Bacon are cooked, add Butter, then add drained Dumplings, and sauté for a few minutes.

* Step 7

Sprinkle with some chopped Spring Onion and Dill, and enjoy immediately.
