Sweet Chilli Prawns & Egg Rice Bowl

‘Sweet Chilli Prawns’ is a very popular dish and I have my own recipe, but it is much easier to cook if you use store-bought Sweet Chilli Sauce. Today I cooked it for my lunch and made it into this Rice Bowl. There is softly cooked Egg underneath the Prawns. It was yummy!

Ingredient

Egg

1 teaspoon

Oil *plus extra

2 tablespoons

Sweet Chilli Sauce

1/2 teaspoon

Soy Sauce

1 teaspoon

Rice Vinegar

Cooking instructions

* Step 1

In a small bowl, combine all the Sauce ingredients.

* Step 2

Place shelled Prawns in a bowl, add 1 pinch Salt, White Pepper and Potato Starch, mix well, and set aside.

* Step 3

Finely chop up Onion and Garlic. Whisk Egg in a bowl and season lightly with Salt & White Pepper. Prepare everything before you start cooking.

* Step 4

Start heating a small frying pan over medium heat. Half fill a bowl with warm Cooked Rice while you are waiting the pan to heat up. Add Oil to the pan and cook Egg softly, then place the softly cooked Egg on the Rice.

* Step 5

Add some extra Oil to the pan, cook Onion and Garlic. When softened, add Prawns, and cook stirring and turning occasionally. *Note: If you use Spring Onion, cook Prawns first.

* Step 6

When Prawns are cooked, add the Sauce. When the sauce has thickened, it is done. Pour the Prawn mixture over the Egg and enjoy.

Wombok & Tuna Salad

This Asian flavoured salad of Wombok can be made very quickly. The thick white parts of Wombok often takes longer to get seasoned and softened, but I have found a trick. I use Salt and Microwave. It’s very quick and easy.

Ingredient

1 tablespoon

Sesame Oil

1 tablespoon

Toasted Sesame Seeds

Cooking instructions

* Step 1

Clean Wombok, cut into 1cm wide pieces, and separate hard white parts and soft parts.

* Step 2

Place the hard white parts into a mixing bowl, add Salt, and toss to mix well. Set aside for 15 minutes OR microwave for 1 minutes (I used 1100W microwave) to speed up.

* Step 3

Add grated Garlic, Sesame Oil, Toasted Sesame Seeds, Asian Chicken Bouillon Powder and Toban Djan (Chilli Bean Sauce), and mix well.

* Step 4

Add soft parts of Wombok and drained Tuna, mix to combine, then add Spring Onion, and mix to combine. Serve immediately.

Spicy ‘Takuan’ (Pickled Daikon)

I bought ‘Takuan’ (Japanese Pickled Daikon), that was quite sweet. ‘Takuan’ can be used for cooking and I often add it to salads such as Coleslaw. Today I thinly sliced it and mixed with Chilli Paste. I even added some Ground Chilli as well. It was supposed to be very spicy but it was quite enjoyable even for me. If you like ‘Takuan’, you may wish to try it. This is how I made it.

Ingredient

1/2 tablespoon

Toasted Sesame Seeds

1/2 tablespoon

Sesame Oil

Cooking instructions

* Step 1

Thinly slice ‘Takuan’ (Japanese Pickled Daikon), 1-2mm thin. Place in a small bowl.

* Step 2

Add all other ingredients and mix well. Taste it, and add some Sugar if required. *Note: Today I added no Sugar as the ‘Takuan’ that I used was quite sweet.

My ‘Mabo Dofu Japanese Style’ is quite different from the authentic Chinese ‘Mapo Tofu’, but it is what my mother used to cook. It is not very spicy and that was important for my family because we could hardly enjoy very spicy food. Today I cooked almost same Pork Mince mixture, but, instead of adding Tofu to it, I poured the mixture over cold Silken Tofu. A quicker & easier way to enjoy the same ingredients.

Ingredient

1 teaspoon

Sesame Oil

1/2 tablespoon

Soy Sauce

1/2 tablespoon

Sake (Rice Wine)

1 teaspoon

Sugar

Cooking instructions

* Step 1

Combine all the Sauce ingredients in a small bowl.

* Step 2

Heat Sesame Oil in a small frying pan over medium high heat and cook Pork Mince. When colour has changed, add Spring Onion, and stir for a few minutes.

* Step 3

Stir the Sauce well and add to the pan. Stir until completely thickened.

* Step 4

Remove excess water from Tofu, place in serving bowl OR plate, cover with the Pork Mince mixture, and serve.

Cold Tofu & Avocado with ‘Yakiniku’ Sauce

‘Yakiniku’ Sauce is a dipping sauce for Japanese style BBQ. My family’s ‘Yakiniku’ Sauce is very versatile and can be used as a seasoning sauce for many dishes. It goes very well with Avocado and Tofu as well. This is a healthy and very nutritious ‘Hiyayakko’, a Japanese dish of cold Tofu. You don’t like Tofu? Try this one. I am confident you will enjoy it.

Ingredient

1/2 teaspoon

grated Garlic

1/2 teaspoon

grated Ginger

1/2 teaspoon

Sugar

1 tablespoon

Soy Sauce

Cooking instructions

* Step 1

Combine all the Yakiniku Sauce ingredients in a mixing bowl. Add Avocado and Spring Onion, and mix to combine.

* Step 2

Remove excess water from Tofu, place in serving bowl OR plate, cover with the Avocado mixture.

* Step 3

Add Toasted Nori on top and enjoy. Drizzle with extra Soy Sauce if required.
