Beef & Egg Rice Bowl

I recently discovered that a local Asian grocery store is selling super thinly sliced Beef. The Beef slices are frozen and in tube shape. Using those super thinly sliced Beef, this ‘Beef & Egg Rice Bowl’ is quick and easy to prepare.

Ingredient

1/2 tablespoon

Mirin

1 tablespoon

Soy Sauce

Cooking instructions

* Step 1

Place the Sauce ingredients in a small frying pan and bring to the boil. Scatter Beef and sliced Spring Onion, and cook until Beef is cooked. It won’t take long.

* Step 2

Pour the whisked Egg to cover, and cook until Egg is softly set OR half cooked. DO NOT stir.

* Step 3

Half fill a bowl with warm Cooked Rice and cover it with the Beef and Egg mixture. Sprinkle with some Shichimi (Japanese Chilli Spice Mix), and enjoy.

I cook this Rice Bowl dish very often using a variety of ingredients, but today I used 1 small can of Mackerel. As you don’t need to cook canned Mackerel, you just warm it up in the sauce, then bind the Mackerel and Spring Onion with Egg. You can use other canned Fish, but this one with Mackerel is absolutely yummy as Mackerel is my favourite fish.

Ingredient

1 can (125 g)

Mackerel in Brine

1/2 teaspoon

grated Ginger

1 tablespoon

Soy Sauce

1 tablespoon

Mirin

Cooking instructions

* Step 1

Drain the Canned Mackerel and discard the brine. Break into bite-size pieces.

* Step 2

Place Water, Dashi Powder, Soy Sauce and Mirin (and Sugar) in a small frying pan (18-20cm) OR saucepan, and bring to the boil over medium heat. Add Mackerel and Spring Onion, and bring back to the boil.

* Step 3

Pour the lightly whisked Egg over but DO NOT stir. Cover with a lid and cook until the Egg is softly set.

* Step 4

Half fill a bowl with warm Cooked Rice, cover it with the mixture, and enjoy. *Note: I sprinkled with some Shichimi (Japanese Chilli Spice Mix).

Avocado Soba Salad with ‘Mentsuyu’ Sauce

On a hot summer day, what I want to eat is something cold such as cold noodles. Today I mixed Green Tea Soba Noodles with Salad Vegetables. I love to eat it with Mentsuyu (Japanese Noodle Dipping Sauce). I added Avocado, which instantly elevated the dish to next level. Avocado matches well with the Soy Sauce flavoured Mentsuyu, and of course it adds some good nutrients to the dish.

Ingredient

1/3 cup

Mentsuyu

1 tablespoon

Mirin

Cooking instructions

* Step 1

If you make Mentsuyu for this dish, combine the ingredients in a heat-proof bowl, and bring to the boil in the microwave, then cool. *Note: This process can be done using a saucepan. Chill the sauce in the fridge.

* Step 2

Cook Soba Noodles as instructed. DO NOT add salt to water. Drain, rinse well in COLD water, and drain well again.

* Step 3

Add thinly sliced Cucumber and Lettuce to the drained Soba, and combine. Place in a deep plate or bowl, add Avocado, top with Nori, sprinkle with some Spring Onion and Toasted Sesame Seeds.

* Step 4

Pour chilled Mentsuyu Sauce over and enjoy.

Garlic Chives & Egg Rice Bowl

Using the Egg to bind the ingredients that are cooked in the saucer or soup is a very popular cooking technic in Japanese cuisine. ‘Oyako Don’ is one example. Today I cooked Garlic Chives and Eggs in this method to make this rice bowl dish. A super quick and easy, and very Japanese flavoured dish.

Ingredient

1 pinch

Salt

1 tablespoon

Soy Sauce

1/2 tablespoon

Sugar

Cooking instructions

* Step 1

Place Dashi Stock, Salt, Soy Sauce and Sugar in a small frying pan or saucepan, add Garlic Chives, cover with a lid, and bring to the boil over medium heat. When it is boiling, Garlic Chives should be softened.

* Step 2

Pour the lightly whisked Egg over but DO NOT stir. Cover with the lid, lower the heat, and cook until the Egg is softly set.

* Step 3

Half fill a bowl with warm Cooked Rice and cover it with the Garlic Chives mixture.

5 . Soba Inari

Probably you are familiar with a Sushi called ‘Inari-zushi’, which is Sushi Rice wrapped in seasoned Abura-age (Thin Fried Tofu). This is the Soba Noodle version of it and it is quite popular in Japan. Soba Noodles are seasoned with ‘Mentsuyu’ (Noodle Dipping Sauce). It is very easy to prepare.

Ingredient

1/2-1 tablespoon

Toasted Sesame Seeds

1 tablespoon

Mirin

Cooking instructions

* Step 1

Combine Dashi Stock, Soy Sauce and Mirin in a small saucepan, bring to the boil, and simmer for a few minutes. Then allow to cool.

* Step 2

Cook a thin omelette and cut into thin noodles.

* Step 3

Warm ‘Inari-zushi no Moto’ (Seasoned Abura-age) to soften, lightly squeeze, carefully open the bags.

* Step 4

Cook Soba Noodles as instructed. DO NOT add salt into the water. Drain, rinse well in COLD water, and drain well again.

* Step 5

Combine drained Soba Noodles, Egg, Toasted Sesame Seeds and the cooled sauce. Fill up Abura-age bags with noodle mixture. Discard the excess sauce.

* Step 6

Place some finely chopped Spring Onion on top of each piece.
