Quick & Easy Pumpkin Curry

There are many Pumpkin Curry recipes out there, but I just don’t have the ingredients that are required for those recipes. I always have a tin of S&B Curry Powder which I love, and I make a variety of curries using it. Today I seasoned this Pumpkin Curry with the S&B Curry Powder, Soy Sauce and Oyster Sauce. Absolutely quick and easy to cook, and I was impressed with its flavour. My husband kept complimenting on it. Now I have to share how I cooked it with you.

Ingredient

1 tablespoon

Curry Powder

1/2 tablespoon

Soy Sauce

Cooking instructions

* Step 1

Remove skin, seeds and spongy bit of Pumpkin, cut into bite-size pieces. Prepare all other vegetables.

* Step 2

Heat Oil in a frying pan over medium heat, cook Onion for a few minutes. Add Garlic, Ginger and Pork Mince (OR Chicken Mince), and stir until Mince changes colour.

* Step 3

Add Curry Powder and stir to combine. Add Pumpkin, Tomato, Chicken Stock, Soy Sauce and Oyster Sauce, then cover with a lid, and cook until Pumpkin is soft. It won’t take very long.

* Step 4

Remove the lid, taste the sauce, add some Salt as required, and cook until the sauce thickens.

* Step 5

Sprinkle with finely chopped Spring Onion, and enjoy with freshly cooked Rice.

I had never used Mayonnaise and Oyster Sauce together to season anything before. As I have seen many recipes on the internet, I decided to try some of them. Mayonnaise is mainly made of Oil. When it is heated, it turns to liquid oil. The dishes that I tried to cook all turned very oily, but the flavour was quite good. For a better result, I recommend to coat Chicken with Potato Starch (OR Corn Starch). DO NOT add too much Mayonnaise. More Mayonnaise means oilier result and it won’t make the dish tastier.

Ingredient

1/2 tablespoon

Oyster Sauce

1 tablespoon

Japanese Mayonnaise

Cooking instructions

* Step 1

Cook Green Vegetable of your choice. Today I sautéed Choy Sum, and seasoned with Salt, White Pepper and a little bit of Soy Sauce.

* Step 2

Cut Chicken into bite-size pieces, season with Salt & White Pepper, and coat with Potato Starch (OR Corn Starch).

* Step 3

Heat Oil in a frying pan over medium low heat, cook Chicken until cooked through. Remove from heat and use paper towel to remove excess oil in the pan.

* Step 4

Add Oyster Sauce and Mayonnaise, and mix to combine.

* Step 5

Half fill a bowl with warm Cooked Rice, and arrange Green Vegetable and Chicken on the Rice. Sprinkle with some Shichimi (Japanese Chilli Spice Mix) and enjoy.

The other day, my daughter gave me a small jar of ground Sanshō peppercorns. She said she would never use it as she would never cook Eels. I told her Sanshō is not only for grilled Eels, and she could use Sanshō for anything just like Ground Pepper. If you have Sanshō and don’t know how to use it, here is one recipe. ‘Quick & Easy Canned Sardines Rice Bowl’ is also recommended.

Ingredient

1 pinch

Salt

1 tablespoon

Miso

1 tablespoon

Mirin

1/2-1 teaspoon

Sugar *alter the amount

Cooking instructions

* Step 1

Combine all the Sauce ingredients in a small bowl. *Note: If more saltiness is required, depending on the saltiness of the Miso, you can add a small amount of Soy Sauce.

* Step 2

Cut Chicken Fillet into bite-size pieces and season with 1 pinch Salt. Prepare all other ingredients.

* Step 3

Heat Oil in a small frying pan over medium heat, cook Chicken pieces. When Chicken pieces are nicely browned and cooked, add white parts of Spring Onion and cook for a minute, then add green parts.

* Step 4

When Spring Onion is cooked, remove from the heat. Add the Sauce to the hot pan, and stir to combine. *Note: Remaining heat cooks the sauce.

* Step 5

Half fill a bowl with warm Cooked Rice and cover it with the Chicken and Spring Onion mixture. Add Egg, sprinkle with extra Sanshō, and enjoy.

Do you want to try a vegetarian dish on meat-free Monday? Try this super simple yet delicious Curry. It has fruity flavour as a can of Tomatoes is used. If Tomatoes are in season, you can use fresh Tomatoes. Season lightly, so that you can enjoy it as a soup. But I like to eat it with freshly cooked Rice. I seasoned it reasonably well.

Ingredient

1-2 cloves

Garlic *grated

2 tablespoons

Curry Powder

1 can (400 g)

Chickpeas *drained

Cooking instructions

* Step 1

Heat Oil in a pot over medium heat, cook Onion until caramelised OR nicely browned.

* Step 2

Add Garlic, Ginger and Curry Powder, and stir. Add canned Tomatoes and cook, stirring frequently, until the mixture has turned into paste.

* Step 3

Add Vegetable Stock and season with Salt. Add Cauliflower florets and drained Chickpeas, and cook until Cauliflower is soft and the soup is thickened. Add Parsley (OR Coriander) and mix to combine.

* Step 4

Enjoy with Rice, Bread, OR as a soup.

Tomato, Pork & Egg Rice Bowl

Stir-fried Tomato, Pork & Egg is a dish I repeatedly cook. We always eat it with freshly cooked Rice, so I made it into a rice bowl. Sweet ripe Tomatoes in season are the best, but I often use not-so-great Tomatoes for stir-fries. When Tomatoes are sour, a little bit of Sugar improves the flavour. Chicken can be used instead of Pork.

Ingredient

* Step 1

Whisk Eggs and lightly season with Salt & White Pepper. Heat Oil in a frying pan over medium heat, cook Eggs softly, and transfer to a plate or the bowl that you used to whisk the Eggs.

* Step 2

Add Pork and cook until nicely browned. Lightly season with Salt & White Pepper. Add Garlic, Tomato pieces and Chilli Flakes, and cook for a few minutes.

* Step 3

When Tomato pieces are softened, add Soy Sauce (and Sugar), and stir. Return the Egg and gently combine.

* Step 4

Half fill a bowl with Freshly Cooked Rice and cover it with the mixture, sprinkle with some finely chopped Spring Onion, and enjoy.
