My Rice Cooker Frittata recipe is very versatile. You can add any ingredients of your choice to the Egg Mixture. Today I added Eggplant & Mushrooms. Red Capsicum OR Tomatoes can be a good addition to this Frittata. You need to precook Vegetables, but once you combined all ingredients and placed the mixture into the rice cooker’s inner pot, all you have to do is to choose the ‘Cake’ setting and press ‘Start’ button. It’s so easy and energy efficient.

Ingredient

Olive Oil *plus extra

1/2 teaspoon

Salt

Cooking instructions

* Step 1

Line the base of rice cooker’s inner pot with baking paper. *Note: It might be unnecessary depending on the condition of your inner pot.

* Step 2

Heat Olive Oil in a frying pan over medium heat, cook Eggplant pieces until nicely browned. You don’t need to cook them until soft. Season lightly with Salt & Pepper. Transfer to a plate.

* Step 3

Add some extra Oil to the pan and cook Mushrooms until nicely browned. Season lightly with Salt & Pepper.

* Step 4

*Note: If you add other vegetables such as Capsicum, cook them as well.

* Step 5

Place Eggs, Self-Raising Flour, Salt & Pepper in a mixing bowl, and mix well. Add shredded Cheese, Parsley and precooked Vegetables, and gently mix to combine.

* Step 6

Pour the mixture into the prepared rice cooker’s inner pot, spread evenly, and start cooking at ‘Cake’ setting.

* Step 7

If it is not cooked yet, leave it in the hot rice cooker for 10 more minutes or heat extra time. Turn out on a plate, and carefully peel away baking paper. Serve hot or cold.

* Step 8

*Note: I used my 10 cup capacity rice cooker which inner pot is 20cm in diameter. I took it out after 35 minutes.

I make ‘1-Hour Focaccia’ when I am in hurry. Using the recipe, you really can make yummy thin bread in 1 hour from scratch. However, when I have a little more time, this ‘Easy Focaccia’ tastes nicer and has a better texture. If you want to impress your guests tonight, it’s not too late to start. You don’t have Bread Flour? You can use Plain Flour. The texture would be similar to Crumpet’s texture if you use Plain Flour. *Note: You need a medium size roasting pan OR baking pan. You can use a baking tray instead.

Ingredient

3 cups

Bread Flour

1 tablespoon

Sugar

1 teaspoon

Salt *plus extra

2 cups

Warm Water

2 tablespoons

Olive Oil *plus extra

Cooking instructions

* Step 1

Place Flour, Dry Yeast, Sugar and Salt in a large bowl, and mix well. Add Warm Water and stir using a spatula. Add Olive Oil, and stir very well. The dough is very soft and gooey. Cover and set aside in a warm place for 15 minutes.

* Step 2

After 15 minutes, wet your hand with water, grab an edge of the dough, lift and bring it to the centre. Repeat several times. If the dough is too soft, use a spatula to do this. Cover and rest for 15 minutes again.

* Step 3

After 15 minutes, repeat the process. This time, you should be able to use your hand. Cover and set aside in a warm place for 30 minutes or until doubled in size.

* Step 4

Prepare a medium size roasting pan OR baking pan. I used 34cm x 26cm roasting pan. You can use a larger pan, OR a baking tray instead. Grease with Butter OR line with baking paper as the Focaccia could stick to the pan (OR tray).

* Step 5

When the dough is ready, drizzle 2 tablespoons Olive Oil and gently coat the dough with the Oil, then turn it out on the prepared pan (OR tray). Drizzle extra 1 tablespoon Oil over the dough, and dimple it, using your fingers. Make sure the dough is in even thickness.

* Step 6

Note: If you use a baking tray, form a large oblong as you dimple the dough.

* Step 7

Preheat oven to 220°C. Sprinkle some Salt and Herb(s) over the dough, and wait until oven is hot. By then, the dough will rise more.

Bake for 15 to 20 minutes OR until nicely browned. Today I baked for 20 minutes. *Note: If Focaccia gets dark too quickly, lower the temperature.

‘Edamame’ are young Soy Beans. In Melbourne where I live, Frozen Edamame Beans, that are already removed from pods, are widely available these days. ‘Edamame’ are sometimes mashed into paste and used for many dishes, even for sweets. Today I made them into this simple soup. Very nutritious, filling, and delicious with crusty bread.

Ingredient

1 teaspoon

Ground Cumin

1 cup

Milk

Cooking instructions

* Step 1

Heat Olive Oil and Garlic in a saucepan over medium heat. When aromatic, add Onion and stir for a few minutes. Add Cumin and Chilli (OR Pepper), then add Edamame and Vegetable Stock. *Note: Water should be enough to cover, but you can add extra Water if required.

* Step 2

Cover with a lid, bring to the boil, then lower the heat and simmer for 10 to 15 minutes OR until Edamame are soft. Add Milk and blend in a blender OR using a stick blender until smooth.

* Step 3

Return to the saucepan, season with Salt & extra Chilli OR Pepper. To make the soup thinner, add some Water (OR Milk if you prefer), and heat up until hot.

* Step 4

Drizzle some Olive Oil, add some finely chopped Parsley, and enjoy with crusty bread.

Garlic, Anchovy & Lotus Root

Lotus Root might be an unfamiliar vegetable for you. It’s hard to find fresh Lotus Root, but Frozen Lotus Root Slices are available from many Asian grocery stores. Lotus Root is a popular vegetable in Japan, and it can be seasoned in a variety of flavours. Today I seasoned with my favourite combination, Garlic and Anchovy.

Ingredient

Cooking instructions

* Step 1

Cut Lotus Root Slices in half if large, and pat dry with paper towel if wet.

* Step 2

Heat Olive Oil in a frying pan over medium high heat, cook Lotus Root until both sides are nicely browned.

* Step 3

Add extra Olive Oil and Garlic, and stir for a few minutes. Remove from the heat, add Anchovy and stir, then season with Salt & Black Pepper. *Note: You might need no Salt as Anchovy is quite salty.

* Step 4

Sprinkle with Parsley and serve.

5 . 1-Hour Focaccia

I first made this 1-Hour Focaccia when I was cooking ‘Chicken Cream Stew’ for dinner and I really wanted to serve it with a nice crusty bread but I didn’t have any bread. I had heard about microwave enforced proofing for quick bread making, so I tried it. Microwave can make the dough warmer and definitely helps the proofing process. But, if you have only 1 hour to make bread, I believe you should add Baking Powder, that improves the texture.

Ingredient

1 teaspoon

Dry Yeast

1 tablespoon

Sugar

2 tablespoons

Olive Oil *plus extra

2 cups

Bread Flour

1 teaspoon

Baking Powder

1/2 teaspoon

Salt

Cooking instructions

* Step 1

Place Warm Water, Dry Yeast and Sugar in a bowl, mix gently and set aside.

* Step 2

Place Bread Flour, Baking Powder and Salt in a large heat-proof bowl, and mix to combine. Make a well in the centre and pour in the yeast mixture and Olive Oil. Mix well to form a soft dough. Knead for 2 to 3 minutes, adding extra flour if required, until smooth and elastic.

* Step 3

*Alternative Method: Increase the amount of Warm Water to 1 cup. Just combine all the ingredients in a heat-proof bowl. Mix well to form a very soft and sticky dough. DO NOT try to kneed it.

* Step 4

Cover the dough with a plate or plastic wrap. Heat in the microwave at low power (150 to 200W) for 30 seconds, and set aside in a warm place for 20 minutes, then heat in the microwave at low power for 30 seconds again.

* Step 5

Transfer the dough on an oiled baking tray OR lined with baking paper. Drizzle some Olive Oil over the dough and use your fingers to flatten the dough into a 1cm thin large oblong.

* Step 6

Let it rise in a warm place for 20 minutes. Preheat oven to 220℃.

* Step 7

Sprinkle some Salt and Herbs over, and bake for 10 minutes or until golden. *Note: Instead of Salt and Herbs, you can spread some Garlic Butter to make Garlic Focaccia.

*Note: You can cook this bread using a frying pan, grill pan, hotplate, etc. Cook 4 to 5 minutes over low heat on each side.
