Spicy Stewed Pork with Tomatoes

This dish is a simple version of my ‘Pork, Chorizo & Black Bean Stew’, but I didn’t add Black Beans because I wanted to serve it with ‘Cuban Inspired Black Bean Rice’. This dish is absolutely easy to cook. Alter the amount of Ground Chilli to suit your taste. I added 1/4 teaspoon and it was just right for me.

Ingredient

1 teaspoon

Ground Cumin

1 teaspoon

Ground Paprika

1 can (400 g)

Diced Tomatoes

Cooking instructions

* Step 1

Cut Pork into bite-size pieces. Prepare Onion and Garlic. Heat Oil in a pot over medium heat, cook Pork until nicely browned. Add Onion and Garlic, and stir for a few minutes, then add all spices and stir.

* Step 2

Add canned Tomatoes, Chicken Stock (OR Stock of your choice) and Bay Leaf, cover with a lid, and simmer over low heat for 30 minutes.

* Step 3

Remove the lid, season with Salt & Black Pepper, and simmer until the sauce is thickened.

* Step 4

Serve with freshly cooked Rice. Today I served with ‘Cuban Inspired Black Bean Rice’

Chipolatas & Cannellini Beans in Mexican Tomato Sauce

In Australia, Chipolatas are small Pork OR Beef Sausages. I first made this dish when I saw a dish made with Chipolatas and Canned Baked Beans. I don’t like Canned Baked Beans, so I used Canned Cannnellini Beans and Tomatoes. This is a quick & easy family dish for a busy person. This kind of dish was a life saver when my children were young and I was terribly busy all the time. Please note that you can make the Tomato Sauce Italian OR Indian OR whatever. Use your favourite spices and herbs.

Ingredient

2 teaspoon

Dried Oregano

1 teaspoon

Ground Cumin

1 can (400 g)

Tomatoes

Cooking instructions

* Step 1

Heat Oil in a large frying pan over medium heat and cook Chipolatas. When nicely browned, but not cooked through, transfer to a plate. Add Onion and Garlic to the pan, and stir.

* Step 2

When Onion is soft, add Spices and Herbs, then add Tomatoes and Chicken Stock (OR Stock of your choice). Season lightly with Salt, return Chipolatas, add Jalapeño (if you add it) and drained Cannellini Beans, and bring back to the simmer.

* Step 3

Simmer for 10 to 15 minutes. Sprinkle with some chopped Parsley OR Coriander, and serve with Potato, Bread OR Rice.

Low-Calorie Curry Flavoured Fish & Vegetable Soup

This is one of the soups that I was cooking for my husband when he was eating a low-calorie soup every day for health reasons. I use no starchy vegetables, but you may wish to add Potato, which is surprisingly low in calories. I recommend to add a few drops Sesame Oil for flavour and health benefits, but I don’t use Oil to cook ingredients. This soup is healthy, and so comforting, filling, nutritious and delicious.

Ingredient

1/2 teaspoon

grated Ginger

1 teaspoon

Curry Powder

1/2

Onion

1-2 leaves

Cabbage

1-2 teaspoons

Soy Sauce

Cooking instructions

* Step 1

Cut all vegetables into small bite-size pieces.

* Step 2

Place Chicken Stock in a large saucepan, add Ginger, Garlic, Curry Powder, Onion and Cabbage, bring to the boil over medium heat, and cook for a few minutes.

* Step 3

Add Broccoli and Cauliflower pieces. When Broccoli pieces are half-cooked, add Sesame Oil, and season with Soy Sauce and White Pepper.

* Step 4

Add Fish pieces. When Fish pieces are cooked, the soup is ready.

This is a soup that is super easy to prepare, yet the flavour is a complex. It has curry flavour, and it is fruity, spicy, salty, and you can make it sour, too. Today I added leftover Dumpling Wrappers, but you can add Noodles instead. OR you can make the flavour stronger and pour it over freshly cooked Rice.

Ingredient

1 tablespoon

Oil

1 teaspoon

Curry Powder

1 tablespoon

Soy Sauce *optional

Cooking instructions

* Step 1

Heat Oil in a saucepan, cook Onion for several minutes or until slightly caramelised. Add Curry Powder, Garlic and Ginger, and stir. Add Tomato and stir for a few minutes.

* Step 2

Add Stock and bring to the boil. Season with Salt and Soy Sauce (*optional). *Note: To add extra sourness, you can add some Rice Vinegar OR Tamarind.

* Step 3

Just before you serve the soup, add Prawns and Dumpling Wrappers, and cook for a few minutes OR until Prawns and Dumpling Wrappers are cooked. It won’t take long.

* Step 4

Add some finely chopped Spring Onion OR Coriander, and enjoy.

When I cook Rice Bowl dishes, I tend to season with Soy Sauce. Today I didn’t use Soy Sauce at all. The creamy sauce is seasoned with Salt & Pepper. It’s very simple, yet so delicious because of the flavour from the Garlic Prawns. It was a brilliant idea to add soft scrambled Egg to the dish.

Ingredient

1 pinch

Salt

1 teaspoon

Oil *plus extra

2 tablespoons

Cream OR Milk

Cooking instructions

* Step 1

Clean Prawns, devein, add 1 pinch Salt, and set aside. Whisk Egg in a small bowl, season lightly with Salt & Pepper. Prepare Garlic, Parsley, and Cooked Rice.

* Step 2

Place Chicken Stock in a measuring jug or small bowl, season with Salt & Pepper to suit your taste. Add Cream (OR Milk) and Potato Starch (OR Corn Starch), and mix well.

* Step 3

Prepare everything before you start cooking. Cooking won’t take long.

* Step 4

Heat Oil in a small frying pan, cook soft scrambled Egg, and transfer to the bowl that you used to whisk the Egg.

* Step 5

Add extra Oil to the pan only if required, add Garlic and stir, then add Prawns. When Prawns change the colour, stir the sauce well and add it to the pan. Stir as the sauce thickens, then add the softly cooked Egg and combine.

* Step 6

Half fill a bowl with warm Cooked Rice and cover it with the Prawn & Egg mixture. Sprinkle with finely chopped Parsley, and enjoy.
