One-pot dinner is life saving for busy parents. I use to cook ‘Macaroni & Beef Mince’ quite often when my children were young. It is quick and easy to prepare, the dish is nutritious, and my children loved it. This is a similar one-pot dish. It’s basically my ‘Chilli Con Carne’. I added Uncooked Dry Macaroni and extra Stock. Quick, easy, nutritious and delicious. If it is for young children, alter the amount of Chilli.

Ingredient

1 tablespoon

Oil

1 can (400 g)

Diced Tomatoes

1 can (410 g)

Kidney Beans *drained

1-2 teaspoons

Ground Paprika

1-2 teaspoons

Ground Cumin

Cooking instructions

* Step 1

Heat Oil in a large & deep frying pan OR pot over medium-high heat, cook Onion, Garlic and Capsicum for a few minutes, add Beef Mince and cook until Beef changes colour.

* Step 2

Add all Spices and stir to mix well. Add canned Tomatoes, and fill up the can with Water, and add the Water and Beef Stock Cube to the pan. *Note: You need to add about 1 & 1/2 cups Beef Stock.

* Step 3

Bring to the boil, add Uncooked Dry Macaroni, and stir to combine. Cover with a lid and cook over medium heat for 10 minutes.

* Step 4

Drain the canned Kidney beans and add to the pan. Stir to combine and season with Salt but the amount of Salt depends on the saltiness of the Stock and Beans. I added 1 teaspoon today. Alter the amount to suit your taste.

* Step 5

Simmer for 5 minutes OR until the Sauce thickens and Macaroni are soft.

Serve with some grated OR shredded Cheese of your choice. I added shredded Tasty Cheese (Cheddar).

I usually serve Chilli Con Carne with Rice. But today I tried to make it into Cottage Pie. Mashed Potato could go well with any flavour and I though this would be delicious, and I was right. I usually don’t add Cheese to my Cottage Pie, but today I added some shredded Tasty Cheese and it was a good decision. This is a different way to enjoy Chilli Con Carne on a cold winter day like today.

Ingredient

1 tablespoon

Oil

1-2 teaspoons

Ground Paprika

1-2 teaspoons

Ground Cumin

2 tablespoons

Plain Flour

1 can (400 g)

Diced Tomatoes

1 can (410 g)

Butter

1/2 cup

Milk

Cooking instructions

* Step 1

Heat Oil in a large frying pan over medium-high heat, cook Onion, Garlic and Capsicum for a few minutes, add Beef Mince and cook until Beef changes colour.

* Step 2

Add all Spices and Flour and mix to combine. *Note: Flour is to thicken the sauce. You can add Tomato Paste instead of Flour.

* Step 3

Add Beef Stock and Tomatoes, and stir well. Bring to the boil, then reduce heat and simmer for 10 minutes, stirring occasionally.

* Step 4

Drain the canned Kidney beans and add to the pan. Stir to combine and season with Salt but the amount of Salt depends on the saltiness of the stock and beans. Simmer for 5 to 10 minutes or until the sauce thickens, stirring occasionally as it is easy to get burnt.

* Step 5

Meanwhile, cook Potatoes in a saucepan of salted water until tender. Drain well. Return to the saucepan and add Butter. Use a potato masher to mash until smooth. Add Milk and stir until well combined. Taste and season with Salt and Pepper.

* Step 6

Preheat the oven to 220C. Spoon the Chilli Con Carne mixture into a large baking dish. Cover with the mashed potato and use a fork to spread over and make a pattern. Scatter some shredded Tasty Cheese.

* Step 7

Bake in the preheated oven for 15-20 minutes or until top is nicely browned. Serve immediately.

When I was planning a vegan Christmas lunch last year, I bought dry soy meat at a local Asian grocery store. On the other day, I finally used it to make ‘Vegan Soy Meat Soboro Don’ and it was delicious. Today I tried another minced meat dish. It’s ‘Chilli Con Carne’. I knew it would be good, and it was delicious. From now on, this dry soy meat is a must item I keep in my pantry for always.

Ingredient

1 tablespoon

canola oil

1-2 teaspoons

ground paprika

1-2 teaspoons

ground cumin

1 tablespoon

plain flour

1 can (400 g)

diced tomatoes

1 can (410 g)

kidney beans *drained

Cooking instructions

* Step 1

Soak dry soy meat in plenty of warm water for 30 minutes. Drain and squeeze to remove excess water, then soak in fresh water, drain and squeeze to remove excess water again. *Note: This process is to remove unpleasant smell from soy meat. It might be unnecessary, or you wish to repeat a few times.

* Step 2

Heat oil in a large frying pan over medium-high heat, cook onion, garlic and capsicum for a few minutes.

* Step 3

Add all spices and flour and mix to combine. *Note: Flour is to thicken the sauce. You can add tomato paste instead of flour.

* Step 4

Add stock and tomatoes, stir well, and bring to the boil. Season with salt but the amount of salt depends on the saltiness of the stock.

* Step 5

Add squeezed soy meat, stir to combine. Soy meat will instantly suck up a lot of sauce. Reduce the heat and simmer for a few minutes, stirring occasionally.

* Step 6

Drain the canned kidney beans and add to the pan. Stir to combine and simmer for 5 to 10 minutes or until the desired texture is achieved, stirring occasionally as it is easy to get burnt.

* Step 7

Serve with freshly cooked rice.

I was making Tomato Soup and I wanted to add leftover cooked Barley to it. Then I decided to add some beans as well. The soup looked like ‘Chilli Con Carne’, so I added the spices that I use to make Chilli Con Carne. The result was excellent. I could have added some Jalapeño.

Ingredient

1 tablespoon

Oil

1-2 teaspoons

Ground Paprika

1-2 teaspoons

Ground Cumin

Cooking instructions

* Step 1

Heat Oil in a large saucepan or pot over medium-high heat, cook Onion, Garlic and Meat.

* Step 2

Add Spices and stir-fry for a few minutes, add Tomatoes and Stock, bring to the boil, then reduce heat and simmer for 10 minutes, stirring occasionally.

* Step 3

Add drained canned Beans and cooked Barley, and simmer for a few minutes. Add Oregano (OR Coriander Leaves or Parsley) and season with Salt & Pepper.

One day I wanted eat Chilli Con Carne but I had only Chicken. I always use Beef for Chilli Con Carne. Anyway, I tried to make Chilli Con Carne with Chicken, and the result was great! Here is a new recipe ‘Chicken & White Beans Chilli Con Carne’. Enjoy it with or without freshly cooked rice.

Ingredient

1 tablespoon

Canola Oil

1-2 teaspoons

Ground Paprika

1-2 teaspoons

Ground Cumin

2 tablespoons

Plain Flour

Cooking instructions

* Step 1

Heat Oil in a large frying pan over medium-high heat, cook Chicken and brown both sides. Add Onion, Garlic and Capsicum, and cook for a few minutes.

* Step 2

Add spices and Flour and mix to combine. *Note: Flour is to thicken the sauce. You can add Tomato Paste instead of Flour.

* Step 3

Add Tomatoes and Water (OR Chicken Stock), and stir well. Bring to the boil, then reduce heat and simmer for 10 minutes, stirring occasionally.

* Step 4

Drain the canned White Beans and add to the pan. Stir to combine and season with Salt. Simmer for 5 to 10 minutes or until the sauce thickens, stirring occasionally as it is easy to get burnt.

* Step 5

Enjoy with or without freshly cooked rice.
