I was going to cook ‘Baked Chicken Tenderloins’ today. However, it was quite hot in the evening and I didn’t want to use the oven. So, I decided to cook them in a frying pan. Then I realised that I actually could make it cheesy. I often cook Broccoli & Cheese in a frying pan. Chicken Tenderloins turned absolutely delicious and very cheesy. Why have I never tried this before?

Ingredient

1 tablespoon

Oil

Cooking instructions

* Step 1

Season Chicken Tenderloins with Salt & Pepper well. You can add Spices and Herbs of your choice.

* Step 2

Sprinkle with Potato Starch (OR Corn Starch) and lightly coat them.

* Step 3

Heat Oil in a frying pan, non-stick preferred, over medium heat, and cook Chicken Tenderloins until both sides are nicely browned.

* Step 4

Scatter shredded Cheese over Chicken, cover with a lid, and cook until Cheese is melted and browned.

Sprinkle with extra Ground Black Pepper (OR chopped Parsley, etc.) and serve.

Lemon Marinated Chicken Tenderloins

You don’t need to marinate Chicken Tenderloins for many hours. Today I marinated for only 15 minutes. And as you know, Chicken Tenderloins can be cooked very quickly. This is a quick and easy, and healthy Chicken dish. Use your favourite Herbs and serve with a refreshing salad.

Ingredient

1-2 cloves

Garlic *grated

2 tablespoons

Lemon Juice

2 tablespoons

Sake (Rice Wine)

1/2 teaspoon

Salt

1/2 teaspoon

Sugar

Cooking instructions

* Step 1

Combine all the Marinade ingredients in a mixing bowl. Add Chicken Tenderloins, mix to combine well, then marinate for 15 to 30 minutes.

* Step 2

Drain the Chicken Tenderloins and discard the marinade.

* Step 3

Heat a grill pan OR frying pan over medium high heat, lightly oil it if necessary, and cook Chicken Tenderloins until both sides are nicely browned and cooked through. It won’t take very long.

* Step 4

Sprinkle with some Salt, Pepper and finely chopped Parsley (OR other Herbs of your choice such as Coriander) and serve.

My ‘Creamy Sesame Dressing’ goes well with many Vegetables, and it can be used as a sauce for Chicken and Fish. Today I added the almost same Sauce, that is only slightly less sour than the Dressing, to the stir-fried Oyster Mushrooms & Chicken. Absolutely simple dish. You can add Carrot, Broccoli, etc.

Ingredient

1/2 tablespoon

Oil

1/2 teaspoon

Sugar

1 teaspoon

Soy Sauce

1/2 teaspoon

Rice Vinegar

Cooking instructions

* Step 1

Combine all the Sauce ingredients in a small bowl.

* Step 2

Cut each Chicken Tenderloin into bite-size pieces. Clean Oyster Mushrooms and tear into smaller pieces. Cut in half if large.

* Step 3

Heat Oil in a frying pan over medium heat and cook Chicken until nicely browned and cooked.

* Step 4

Add Garlic and stir, then add Oyster Mushrooms, and stir until Mushrooms are cooked. Season with Salt & White Pepper.

* Step 5

Drizzle the Sauce over and sprinkle with some finely chopped Spring Onion.

Have you bought ‘Aonori’ (Dried Green Laver Flakes) to make ‘Okonomiyaki’ and have some leftover? You can add it to Tempura batter. Tempura made with the batter with a flavour of sea is called ‘Isobe-age’. Most commonly ‘Aonori’ is added to the batter. Finely crumbled Nori, Hijiki, Wakame, or other Seaweed can be used. Today I made Chicken Tenderloins into ‘Isobe-age’.

Ingredient

2 tablespoons

Plain Flour

1/4 teaspoon

Salt

4 tablespoons

Cold Water

Cooking instructions

* Step 1

Make Tempura Batter by mixing all ingredients.

* Step 2

Cut each Chicken Tenderloin into 2-3 pieces. Season with Salt & Pepper, sprinkle with Plain Flour and lightly coat.

* Step 3

Heat Oil to 180°C. Dip Chicken pieces into the batter to coat, and fry for 2-3 minutes OR until batter is light golden and crispy. Take them out and lay them on a rack or paper towel to drain the oil.

Very Crunchy Kara-age Chicken Tenderloins

A few weeks ago, I was preparing Chicken Tenderloins for dinner, but I was not yet sure how I would cook them. I took out ‘Panko’ Breadcrumbs to make Crumbed Chicken, but I changed my mind and decided to make them into ‘Kara-age’, Japanese style fried Chicken. I marinated the Chicken, I didn’t need ‘Panko’ any more, but I happened to add it to the marinating Chicken. The Chicken tuned out very crunchy. It became another recipe.

Ingredient

2 tablespoons

Soy Sauce

2 tablespoons

Sake (Rice Wine)

Cooking instructions

* Step 1

Combine all the Marinade ingredients in a bowl, add Chicken Tenderloins, massage, and set aside for 5-10 minutes.

* Step 2

Add ‘Panko’ Breadcrumbs and Plain Flour to the Chicken and mix to combine. If the coating is too wet and sticky, add extra Flour. Coat Chicken Tenderloins evenly using all the batter that is rather a dry dough.

* Step 3

Heat oil to 170 to 180℃ and fry a few Chicken Tenderloins for 3-4 minutes OR until nicely browned and crunchy. Place on a rack and drain the oil. Repeat with remaining Chicken Tenderloins.
