It takes time to cook Ham Hock until soft and that’s the down side of this soup. However, Ham Hock makes an excellent stock. Cook Vegetables and Beans in the stock until soft. That’s basically how to cook Ham Hock Soup. You can cook Dried Split Peas in the stock to make the popular Pea & Ham Soup. You can use Potato instead. Today I used Cannellini (White Beans). Ham Hock Soup is easy to cook. It just takes time, but there is a way to reduce the cooking time. Read ‘Method 2’.

* Step 1

*Note: If you are going to use Dried Cannellini (OR other Beans), they need to be soaked in water overnight, then drain. Canned Beans are quick and easy to use.

* Step 2

Stand the Ham Hock upright on a cutting board and carefully cut off the meat from the bone into a few large chunks. *Note: This process is optional but it reduces cooking time.

* Step 3

Place Ham Hock chunks and bone in a pot. Add Water, Onion, Garlic, Celery and Bay Leaf. Cover with a lid, and bring to the boil.

* Step 4

Once it is boiling, reduce heat to low and simmer for 1 to 2 hours OR until Ham Hock meat is soft. *Note: Add extra Water if required.

* Step 5

Carefully take out Ham Hock meat and bone to a plate. Thin stalks and leaves of Celery can be discarded.

* Step 6

Cut all vegetables into the size that is easy to eat. Add vegetables and other ingredients to the stock, and cook until soft. However, Dried Beans takes longer time to cook and some vegetables can be cooked quicker than others. You need to add them to the stock accordingly.

* Step 7

*Note: Add soaked Dried Beans OR Dried Split Peas first. Then add Carrot and Celery. If you use Potato, add it when Carrot is soft. Drained Canned Beans should be added last.

* Step 8

Meanwhile, discard the fatty rind of Ham Hock, take off all meat from the bone, and tear OR cut meat into bite-size pieces. Meat can be added to the finished soup OR cooked with vegetables.

* Step 9

Season with Salt & Pepper, add finely chopped Spring Onion (OR Parsley), and serve.

This stew is super easy to cook and really delicious. It takes at least 1 & 1/2 hours, but you don’t need to do anything really. Just simmer the ingredients until ready. Chicken Drumsticks would be very soft after 1 & 1/2 hours. You may wish to add Noodles such as Ramen Noodles OR Rice Noodles. This is a perfect dish for your dinner on a cold day.

Ingredient

6 cups (1.5 L)

Water

1-2 cloves

Garlic *squashed

Cooking instructions

* Step 1

Place Chicken Drumsticks, Water and Sake in a pot. Add Ginger, Garlic and Spring Onion, cover with a lid, and bring to the boil.

* Step 2

Once it is boiling, reduce heat to low and simmer for 1 hour.

* Step 3

Cut all Vegetables into chunky bite-size pieces.

* Step 4

Season the soup with Salt and White Pepper. Add Vegetables and cook until Vegetables are soft. However, some Vegetables can be cooked quicker than others. You need to add them to the soup accordingly.

* Step 5

*Note: This is how I cook Vegetables. Add Carrots first and cook for 10 minutes. Add Onions and cook for 10 minutes. Then add Potatoes, and cook until Potatoes are soft. Lastly add Green Leafy Vegetable and cook for a few minutes OR until soft.

In Japan, there is a super quick & easy dish called ‘Tamago Gohan’, that means ‘Egg Rice’. You just add a raw Egg and a little bit of Soy Sauce to hot Rice in a rice bowl, then mix it. The Egg would be slightly cooked by the heat. Nothing can be easier than this, and it is actually very popular. I heard Italy has a similar super quick & easy dish. You just combine fried Egg and Spaghetti. I have tried it today. It was really good.

* Step 1

Cook Spaghetti in boiling salted water according to the instruction on the package.

* Step 2

When Spaghetti is nearly cooked, heat Olive Oil and Garlic in a frying pan over medium high heat. When aromatic and Garlic is golden, take Garlic out. Add Eggs and 1 pinch Salt. When Egg White is set and edges are brown, add Spaghetti and about 1/4 cup salted water that has been cooking Spaghetti, and stir to combine. That’s it! DO NOT over cook it.

* Step 3

Place on a serving deep plate, add a generous amount of grated Parmesan Cheese (OR Pecorino Cheese), add some Black Pepper and the fried Garlic, and enjoy.

My family loves my Pork ‘Kakuni’. I cook it using a pressure cooker. This recipe is almost identical to the ‘Kakuni’ recipe, but I added extra ingredients for extra flavour, and I made it into a rice bowl dish as we always eat it with Rice. This recipe’s method is the most common ‘saucepan method’, so anyone can cook it without a pressure cooker. It is not hard. You only need to cook it longer until Pork is soft.

Ingredient

2 tablespoons

Soy Sauce

Cooking instructions

* Step 1

Place Pork Belly in a large saucepan. If too large, cut into the size that fits in the saucepan. Cover with Water and bring to the boil, and simmer over low heat for 30 minutes. Remove any scum and fat on the surface.

* Step 2

Leave the Pork Belly in the Water until slightly cooled. If you go to next process straight away, work carefully because it is hot.

* Step 3

Take out the cooked Pork Belly and cut into chunky bite-size pieces. Save 1 cup Water and discard the rest of Water, OR you may wish to use it for something else.

* Step 4

Place all the Sauce ingredients and Pork pieces in the saucepan, cover with the lid, and and bring to the boil. Simmer over low heat for 1 hour or until Pork is soft.

* Step 5

Remove the lid and cook until the sauce thickens. Taste the sauce, and you may wish to add extra Sugar. *Note: Add Potato Starch mixture to thicken the sauce, but it is optional. You don’t need to add all of it.

* Step 6

Half fill a bowl with warm Cooked Rice and cover it with Pork and Boiled Egg. Add some Green Vegetables if you like it. Today I added some blanched Spinach. Sprinkle with finely chopped Spring Onion and enjoy.

Ingredient

tahini

olive oil

ground cumin

Cooking instructions

* Step 1

Blend all the ingredients until it becomes a paste. Start pouring the lemon, olive oil and tahini, then the chickpeas on top so it doesn't get stuck. Mine does, it might be because my food processor is tiny.

* Step 2

If it gets too dry and difficult to mix, add water bit by bit until it has the desired consistency.

* Step 3

Add more salt if necessary.
