‘Gyū Don’ is a rice bowl dish. Thinly sliced Beef and Onion simmered in a sweet soy sauce flavoured dashi stock is placed on rice. It is one of the most popular dishes in Japan. Probably every family has its own recipe. In Melbourne where I live, thinly sliced Beef is not widely available. When I cook Gyū Don, I have to slice a block of Beef thinly using a knife by myself, and it is getting harder to do with my aching hands. Here is the Minced Beef version. Super easy and anyone can cook it.

Ingredient

Onions

2 tablespoons

Sugar

2 tablespoons

Mirin

4-5 tablespoons

Soy Sauce

Cooking instructions

* Step 1

Heat Dashi Stock, Sugar, Mirin and Soy Sauce in a frypan or a large sauce pan over a medium heat, add Onion and Ginger.

* Step 2

When it’s started boiling, place Beef Mince on top the Onion, breaking down into small pieces using your fingers, and cook for 10 minutes OR until Onion is soft.

* Step 3

Make some room to add Harusame Noodles into the sauce, and cook until the Noodles turn transparent. Harusame Noodles will suck up the sauce.

Half fill a bowl with freshly Cooked Rice and cover it with the Beef mixture. Serve with Pickle Ginger if you like. Today I sprinkled with some Shichimi (Japanese Chilli Spice Mix).

2 . Curry Flavoured Nikujaga

Curry Flavoured Nikujaga

‘Nikujaga’ is simmered Meat (Niku) and Potatoes (Jagaimo). I cook it with a variety of Meat, and my family members love the dish. Soy Sauce, Mirin and Sugar are used to season ‘Nikujaga’, but I added some Curry Powder today. Curry flavour can go quite well with the sweet soy sauce flavour.

Ingredient

Onions

1 tablespoon

Sugar

1 tablespoon

Mirin

2-3 tablespoons

Soy Sauce

2 teaspoons

Curry Powder

Cooking instructions

* Step 1

Cut the thinly sliced Beef (OR Pork, Chicken) into bite size, Potatoes into 4 to 5cm pieces, and Onion(s) 1-2cm strips. If you add Carrot, cut smaller than Potato pieces as it takes longer to cook.

* Step 2

Place Potato, Carrot, Onion and Ginger into a pot and just cover with Dashi Stock (OR Water). You would need 400 to 500ml. Add Sugar, Mirin, Soy Sauce and Curry Powder, cook over high heat.

* Step 3

When it starts boiling, add Beef (OR Pork, Chicken), cover with a lid, and cook until Potato is soft, stirring occasionally. *Note: Lower the heat if required, but I usually keep the high heat.

* Step 4

When Potato is cooked, remove the lid, and cook until the sauce is thickened, shaking and tossing occasionally.

* Step 5

Pour into a large serving bowl and serve.

Red Seabream Snapper is a fish that is called ‘Madai’ in Japan, and it is known as an auspicious food. The fish is often served for New Year’s celebration and special occasions to celebrate the events. This ‘Snapper Takikomigohan’ is also a quite special rice dish, but you don’t need to wait for a special occasion to arrive. I cooked this dish today because Snapper was on special at ALDI.

Ingredient

1/4 teaspoon

Salt

2 tablespoons

Sake

1 tablespoon

Soy Sauce

Cooking instructions

* Step 1

Place Snapper fillets, with/without skin, in a deep plate or bowl, sprinkle with Salt, Sake, Soy Sauce and sliced Ginger, and marinate the fish for 30 minutes. *Note: You may wish to cover and rest in the fridge on a hot day.

* Step 2

Wash Rice by stirring it thoroughly in water with your hand and drain the water. Repeat this a few more times until water flows through clear. Drain the rice and place it into the rice cooker’s inner pot.

* Step 3

Transfer the Snapper fillets from the marinade to a plate, pour the marinade with the ginger strips over the rice, add the Dashi Stock up to the 2-cups-marking. You may not need to use all of Dashi Stock. Place Snapper fillets on top.

* Step 4

Press ‘COOK’ button to start cooking. When the rice is cooked, let it steamed for 10 minutes. Then loosen and mix gently.

* Step 5

Enjoy with some toppings of your choice, such as finely chopped Spring Onion, Nori or Toasted Sesame Seeds.

Squid ‘Okowa’ Glutinous Rice

Steamed glutinous rice dishes can be cooked by rice cooker. It’s much easier and quicker, which is more suitable for our modern lifestyle. Just like other my glutinous rice dishes, this dish is also really yummy and easy to cook. If you like ‘Mochi’, you would love its rubbery texture.

Ingredient

2 tablespoons

Sake

2 tablespoons

Soy Sauce

Cooking instructions

* Step 1

Wash Glutinous Rice and Regular Short Grain Rice together and drain.

* Step 2

Clean Squid, slice the body into 7 to 8mm rings, and cut large tentacles in half.

* Step 3

Place Squid in a bowl, add Ginger, Sake and Soy Sauce and massage, set aside for 10 minutes.

* Step 4

Make soup by mixing all ingredients.

* Step 5

Place well-drained Rice in the rice cooker’s inner pot, place Squid & Ginger mixture over the Rice. DO NOT MIX. Gently pour the soup over.

* Step 6

Plug the rice cooker in and press the Cook/Start button. When the rice is cooked, let it steamed for 10 minutes, then toss the rice gently. Sprinkle Spring Onion and Shichimi over to serve.

‘Gyū’ means 'Beef'. Thinly sliced Beef and Onion simmered in a sweet soy sauce flavoured dashi stock are on top of the rice. ‘Gyū Don’ is s very popular food in Japan, it is commonly served with Beni Shōga (pickled ginger) but it is totally optional.

Ingredient

1-2

Onion

2 tablespoons

Sugar

4-5 tablespoons

Soy Sauce

2-3 tablespoons

Mirin

Cooking instructions

* Step 1

* Step 2

Heat Dashi Stock, Sugar, Mirin and Soy Sauce in a frypan or a large sauce pan over a medium heat, add Onion and Ginger.

* Step 3

When it’s started boiling, add thinly sliced Beef and cook for 10 to 15 minutes.

* Step 4

Make some room to add Harusame Noodles into the sauce, and cook until the noodles become soft and transparent.

* Step 5

Half fill a bowl with freshly cooked rice and cover it with the Beef mixture. Serve with Pickle Ginger if you like.
