This dish is a variation of my ‘Miso Peanuts & Tofu’. I replaced Tofu with steamed Sweet Potato. I wanted to use Pumpkin, but Pumpkins in Australia are all too wet and not suitable for stir-fry dish like this one. Floury Pumpkin that has fluffy texture would be great. You may wish to try with your Pumpkin. Today I used orange coloured Sweet Potato, that is a good substitute.

Ingredient

1 tablespoon

Oil

1 tablespoon

Sugar

1 tablespoon

Mirin

Cooking instructions

* Step 1

Peel and cut Sweet Potato into bite-size pieces and steam until soft.

* Step 2

In a small bowl, combine Miso, Sugar and Mirin. Add some Chilli Flakes if you like the sauce spicy. To make the sauce thinner, add a small amount of Water OR Sake (Rice Wine).

* Step 3

Heat Oil in a frying pan and cook steamed Sweet Potato pieces until slightly browned. Add Peanuts and stir. Then remove from heat.

* Step 4

Add the Miso Sauce and combine well. The remaining heat will cook the sauce, but you can cook over low heat if you prefer.

* Step 5

Sprinkle some Shichimi (Japanese Chilli Spice Mix) if you like, and serve.

This dish is very popular and the mixture is usually made with Pork OR Chicken Mince. I made this Vegan version for my Vegan friends. By adding a variety of ingredients, you can create a great flavour. If you ran out of Lettuce, you can enjoy it with freshly cooked rice, too.

Ingredient

1 tablespoon

Sesame Oil

1 clove

Garlic

1/2

Carrot

2 tablespoons

Sugar

1 tablespoon

Toasted Sesame Seeds

Cooking instructions

* Step 1

Finely chop up all vegetables. If you have a food processor, you may wish to use it, but DO NOT over-process Vegetables into too small pieces.

* Step 2

Combine all the sauce ingredients in a small bowl.

* Step 3

Heat Sesame Oil in a frying pan over medium heat, cook Vegetables. When soft, add crumbled Tofu and the sauce. Mix well and cook for 1-2 minutes until combined well.

* Step 4

Enjoy with Iceberg Lettuce cups, OR with freshly cooked rice.

‘Kimu-Taku’ stands for ‘Kimuchi (Kimchi) and Takuan (Japanese Pickled Daikon) and you may interested in my fried rice dish ‘Kimu-Taku’ Rice. I stir-fried Squid, that is marinated in Miso sauce, with Kimchi and Takuan. If you love Kimchi and Takuan, this dish is irresistible. https://cookpad.com/uk/recipes/1472143-kimu-taku-rice

Ingredient

Sake (Rice wine)

1 tablespoon

Cooking instructions

* Step 1

Cut Squid Tube into the size that is easy to eat. I made shallow cuts on one side before cut into small pieces.

* Step 2

In a bowl, combine Miso, Sake (Rice wine), Mirin, Ginger and Sugar. Add Squid pieces and marinate for 15 minutes.

* Step 3

While marinating, prepare vegetables. Cut Kimchi and Pickled Daikon into smaller pieces or strips if large. Finely chop up Spring Onion.

* Step 4

Heat Sesame Oil in a frying pan over medium heat, add Squid and all marinade into the pan and cook until Squid changes colour and the sauce thickens. Add Kimchi, Takuan and Spring Onion, stir to combine. And that’s it!

* Step 5

Half fill a bowl with Freshly Cooked Rice and cover it with ‘Kimu-Taku’ Squid mixture, and sprinkle with some Toasted Sesame Seeds.

Jacket Potato With Spicy Miso Pork

I love Jacket Potato but I am a little bit sick of the same toppings. What is your favourite topping? Sour Cream & Bacon, Ham & Cheese, Bolognese Sauce, Tuna Salad, Chilli Con Carne, or Curry? Here is a new topping suggestion. ‘Spicy Miso Pork’ for your Jacket Potato. I bet you have never tried it before.

Ingredient

1 teaspoon

Sesame Oil

1 tablespoon

Sugar

2 tablespoons

Mirin

1/2 tablespoon

Soy Sauce

Cooking instructions

* Step 1

To bake Potatoes, pre-heat oven to 220℃. While the oven is heating up, I recommend to heat scrubbed and washed Potatoes in the microwave. I usually heat Potatoes at 500 to 600W power, occasionally turning over, until they are slightly soft to touch. This will reduce the baking time.

* Step 2

Bake for 20 to 30 minutes. If not pre-cooked, turn down the oven to 180℃ and bake further until inside is soft.

* Step 3

In a small bowl combine all the sauce ingredients.

* Step 4

To make Spicy Miso Pork, heat Sesame Oil in a frying pan, cook Pork Mince for a few minutes. Add the additional ingredients and cook until all are cooked. Add the sauce and the stock, stir, and bring to the boil.

* Step 5

Mix Potato Starch and Water very well, add to the boiling pork mixture, stir until the mixture is thickened.

* Step 6

Cut the baked potatoes, place plenty of Spicy Miso Pork on top and sprinkle with some chopped Spring Onion.

‘Otsumami’ is something to nibble often with drink which is most likely alcoholic drink. This is a perfect ‘Otsumami’. Crunchy Peanuts and fried Tofu are dressed with sweet miso sauce. Easy, quick and yummy! If you have a toaster oven, you can toast the Tofu pieces, and it is even easier.

Ingredient

1 tablespoon

Oil

1 tablespoon

Sugar

1 tablespoon

Mirin

Cooking instructions

* Step 1

In a small bowl, combine Miso, Sugar and Mirin.

* Step 2

Dry Tofu cubes with paper towel. Heat Oil in a frying pan and cook Tofu cubes until nicely browned and crunchy. Add Peanuts and stir-fry for a few minutes and remove from heat.

* Step 3

Add the miso sauce and combine well. The remaining heat will cook the sauce slightly.

* Step 4

Sprinkle some Shichimi (Japanese Chilli Spice Mix) or Ground Chilli if you like and enjoy with your favourite drink.
