Here is another super easy dish that you can make with a small can of Tuna. If you have already cooked Rice, you don’t need to cook anything. Just mix Tuna with a sauce, and enjoy with the Rice. This recipe includes two different sauces, ‘Chilli & Oyster Sauce’ and ‘Gochujang & Garlic Sauce’. Both are delicious. Depending on what you have in hand, choose one of them.

Ingredient

1/2 teaspoon

grated Ginger

1/2-1 teaspoon

Oyster Sauce

1 teaspoon

Soy Sauce

1/4 teaspoon

Sugar

1/4 teaspoon

Sesame Oil

1/2-1 teaspoon

Gochujang

Cooking instructions

* Step 1

Combine the sauce ingredients in a small bowl, add drained Tuna, add Spring Onion, but save some for topping, and mix to combine.

* Step 2

Half fill a bowl with warm Cooked Rice, scatter Nori pieces, and cover with the Tuna mixture. Sprinkle with saved finely chopped Spring Onion and some Toasted Sesame Seeds, and enjoy.

Since I invented ‘Gochujang Mackerel Rice Bowl’, I have been making it frequently. I actually don’t need to cook anything if I had already cooked Rice. Because it is so easy and delicious, I made a Udon Noodle version today. I recommend to add an Egg to this dish. Egg can be boiled, poached OR fried, but I microwaved it as it is the quickest and easiest method. It took less than 60 seconds to cook an Egg. This is another quick and easy dish that can be made with a can of Mackerel OR other fish.

Ingredient

1 can (125 g)

Mackerel in Brine

1/2 clove

Garlic *grated

1 teaspoon

Soy Sauce

1 teaspoon

Mirin

1/4 teaspoon

Sugar

1/4 teaspoon

Sesame Oil

Cooking instructions

* Step 1

Heat Cooked Udon Noodles in boiling water, then drain. You can cool the Udon Noodles under cold water if you prefer the Udon Noodles cold.

* Step 2

Combine all the Sauce ingredients in a bowl. Drain Canned Mackerel, discard the brine, break into bite-size pieces, add to the sauce, and mix to combine. *Note: You can add Spring Onion as well, but save some for topping.

* Step 3

Place the drained Udon Noodles on a plate, cover with the Mackerel mixture, add the Egg, scatter Nori pieces and Spring Onion. Today I added some Crispy Chilli Oil as well.

Canned Mackerel costs slightly more than Canned Tuna, but both are really handy items to stock in the pantry. My husband says Canned Mackerel smells bad, but I love it. Canned Mackerel makes delicious Rice Bowl dishes. ‘Curry Mackerel Don’ and ‘Miso Mackerel Don’ are just a few example. Here is another Rice Bowl dish that can be made with Canned Mackerel, and you don’t need to cook it.

Ingredient

1/2 clove

Garlic *grated

1 teaspoon

Soy Sauce

1 teaspoon

Mirin

1/4 teaspoon

Sugar

1/4 teaspoon

Sesame Oil

Cooking instructions

* Step 1

Drain Canned Mackerel, discard the brine, and break into bite-size pieces.

* Step 2

Combine all the Sauce ingredients in a bowl, add Mackerel pieces, and mix to combine.

* Step 3

Half fill a bowl with warmed Cooked Rice, scatter Nori pieces, and cover with the Mackerel mixture. Sprinkle with finely chopped Spring Onion and some Toasted Sesame Seeds, and enjoy.

This is an easy version of my ‘Teriyaki Chicken With Tartar Sauce’, replacing the Tartar Sauce with just Mayonnaise. I made it into a rice bowl dish as I always eat the dish with rice. Super easy to cook, delicious and nutritious, and perfect for lunch.

Ingredient

1 pinch

Salt

1/2 teaspoon

Oil

1/2 tablespoon

Mirin

1/2 tablespoon

Sugar

1 tablespoon

Soy Sauce

Cooking instructions

* Step 1

Combine all the sauce ingredients in a small bowl.

* Step 2

Cut Chicken Fillet into bite-size pieces and lightly season with Salt. Heat Oil in a small frying pan and cook Chicken until golden. Remove excess Oil using paper towel if you want to do so, then pour the sauce over and keep cooking until the sauce thickens.

* Step 3

Half fill a bowl with Freshly Cooked Rice, place Nori, and top with Chicken and the sauce. Drizzle some Japanese Mayonnaise over, and sprinkle with finely chopped Spring Onion and Toasted Sesame Seeds. Add Boiled Egg and enjoy.

Today I craved Sushi Rolls. Nearby sushi shops are closed due to Covid-19. I didn’t want to bother making Sushi Rolls just for my lunch. Then I made such a simple Sushi Rice Bowl using leftover rice. I wished to add some Lettuce and Avocado but I didn’t have them. I added steamed Carrot and Broccoli, that were last night’s dinner leftover. You can add anything you have.

Ingredient

2 teaspoons

Sugar

3 teaspoons

Rice Vinegar

1 tablespoon

Japanese Mayonnaise

Cooking instructions

* Step 1

Heat the cooked Short Grain Rice as the Rice should be hot when mixed with Vinegar mixture.

* Step 2

Combine Rice Vinegar, Sugar and Salt, and add the mixture to hot Rice. Mix well and allow to cool to the room temperature.

* Step 3

In a small bowl, combine Tuna, Edamame Beans, Cucumber, finely chopped Onion and Japanese Mayonnaise. Season with Salt and Pepper.

* Step 4

Half fill a bowl with the Rice and cover it with the Tuna mixture and the additional vegetables of your choice. Top with Nori and Toasted Sesame Seeds, drizzle some Soy Sauce over, and enjoy.
