Oven-Baked Seafood Okonomiyaki

Oven-baking is the easiest way to cook ‘Okonomiyaki’ for a larger number of servings. Mix plenty of shredded Cabbage with the simple batter, add your favourite ingredients, spread it over a baking tray, and bake it in a hot oven. Today I made Seafood Okonomiyaki. As Seafood can be cooked quickly, I mixed them with Cabbage mixture. This is perfect for a family dinner and also to entertain your guests.

Ingredient

Cooking instructions

* Step 1

Preheat the oven to 220°C. Mix Flour, Water, Eggs, Salt and Dashi Powder in a large mixing bowl.

* Step 2

Add shredded Cabbage and mix well. You may add more vegetables such as Carrot and Spring Onions. Add as much as you want.

* Step 3

Sprinkle some Flour over Seafood and roughly coat, add to the Cabbage mixture, then mix to combine. If the batter is too runny, add extra Flour.

* Step 4

Line a large baking tay (OR 2 trays) with baking paper. Spread the mixture and form large pancakes, in oblong or rectangle shape.

Bake for 20 to 25 minutes until top is golden, and the Seafood are cooked.

Place the Okonomiyaki on a large plate or board. Dress with Okonomiyaki Sauce and Japanese Mayonnaise. Sprinkle Aonori (Dried Green Laver Flakes) if you have it, and serve immediately.

Zucchini & Edamame Okonomiyaki

There had been a large Zucchini in the fridge for a while, and I had to use it sooner. I decided to make Okonomiyaki using it. It turned out the softest and fluffiest Okonomiyaki I ever cooked. I added Edamame, but you can add Prawns, Squid, Bacon, Ham, OR etc. Pan-frying would be a quick and energy saving method, but oven-baking is also good if you cook a larger amount.

Ingredient

1/2 cup

Water

1/8 teaspoon

Salt

Cooking instructions

* Step 1

In a mixing bowl, combine Flour, Water, Egg, Salt and Dashi Powder to make batter.

* Step 2

Slice Zucchini into thin strips, but not too thin, and add to the bowl. Add all other ingredients and mix well.

Oil a barbecue hotplate or a frying pan and pour the Zucchini mixture to form a large pancake. *Note: You might prefer cooking 2 small pancakes.

Cover with a lid and cook over medium low heat for 5 minutes. Flip the pancake over using a large plate, cover with the lid, and cook for 5 minutes until Zucchini mixture is cooked. You may turn the pancake over a few times while cooking.

*Note: If you wish to bake it in the oven, bake at 220°C for 15 to 20 minutes or until cooked.

* Step 6

Place the pancake on a plate, dress with Okonomiyaki Sauce and Japanese Mayonnaise, and sprinkle with Aonori.

Oven-baked Okonomiyaki with Ham & Egg

It takes time to cook ‘Okonomiyaki’, especially when you make many. When I cook it for whole family, I bake one large Okonomiyaki in the oven. Today’s Okonomiyaki is about 40 x 30cm. Such a jumbo Okonomiyaki can’t be flipped over, but I don’t need to to do so as I bake it in the oven. Today I used Ham & Egg. Prawns & Egg is another nice combination.

Ingredient

2 cups

Water

1/4-1/2

Cabbage

Cooking instructions

* Step 1

Preheat the oven to 220°C. Make a batter by mixing Flour, Water, 2 Eggs and Dashi Powder.

* Step 2

Add shredded Cabbage, Ham and Edamame (OR Peas) to the batter, and mix well. You may add more vegetables and other ingredients to it.

* Step 3

Line 1 large baking tray (OR 2 baking trays) with baking paper. Spread the mixture on the tray(s). Spread whisked 2 Eggs on top.

Bake for 15 to 20 minutes until top is browned and the cabbage mixture is well cooked.

Dress with Okonomiyaki Sauce and Japanese Mayonnaise, and enjoy. *Note: Sprinkle Katsuobushi (Bonito Flakes), Aonori OR Benishooga (Pickled Ginger) if you have, but I didn’t haver any of them.

‘Okonomiyaki’ is commonly made with Cabbage. I often make it with Kale. Broccoli version is also very yummy. Especially Broccoli stems are perfect for this ‘Okonomiyaki’. When Broccoli are in season and they are tasty and cheap, why don’t you try it? I like Prawns for Broccoli version, but you can use Squid, Pork, Ham, or whatever ingredients you like.

Ingredient

* Step 1

Make the batter by mixing the Flour, Water, Eggs, Salt and Dashi Powder.

* Step 2

Add finely chopped or shredded Broccoli, Prawn pieces and Spring Onion to the batter and mix it well.

* Step 3

Oil a barbecue hotplate or a frying pan, pour the mixture to form pancakes. When the edge of the pancake has set, flip the pancakes over, and cook for 2 or 3 minutes until all the batter is cooked. You may turn the pancakes over a few times while cooking.

* Step 4

Place the pancake on a plate, and dress with Okonomiyaki Sauce and Japanese Mayonnaise. Sprinkle with Aonori or other toppings if you like. *Today I sprinkled with chopped Parsley.

I have included Pork and Cabbage in this recipe. These can be substituted for ANY INGREDIENTS at all. Because this is ‘Okonomiyaki’, that means 'cook what you like' and you can use whatever you like.

* Step 1

Make batter by mixing the Flour, Water, Eggs, Salt and Dashi Powder. Add shredded cabbage to the batter and mix it well.

* Step 2

Oil a barbecue hotplate or a frying pan and cook pork on both sides. * If you choose to use a filling such as seafood, ham or cheese that doesn’t have to be as well cooked as pork does, you can simply mix these ingredients in with the batter and cabbage mix instead of cooking them first.

* Step 3

Pour the cabbage mixture over the pork pieces to form pancakes. When the edge of the pancake has set, flip the pancakes over, and cook for 2 or 3 minutes until all the batter is cooked. You may turn the pancakes over a few times while cooking.

* Step 4

Place the pancake on a plate with the pork on the top. Dress with Okonomiyaki Sauce and Japanese Mayonnaise, and sprinkle with Katsuobushi and Aonori. Benishooga (pickled ginger) also goes well with this as a topping.
