‘Mabo Dōfu’ (Mapo Tofu) is one of the foods that I sometimes crave for. The other day, when I wanted to cook it, I didn’t have Tofu. I sometimes cook the same dish using Eggplant OR Harusame Noodles, but I didn’t have them either. Then an idea came to me. How about Potato?

Ingredient

1 tablespoon

Oil

250-300 g

Pork Mince

1 tablespoon

Dark Colour Miso

1 tablespoon

Soy Sauce

1 tablespoon

Sugar

2 tablespoons

Sake (Rice Wine)

1 tablespoon

Sesame Oil

1 tablespoon

Potato Starch

Cooking instructions

* Step 1

Peel Potatoes, cut into bite-size pieces, cook in the salted Water until soft, then drain.

* Step 2

Place all the Sauce ingredients in a mixing bowl and mix well. This has to be done before you start cooking Pork Mince.

* Step 3

Heat Oil in a large frying pan or a wok, cook Pork Mince, Garlic, Ginger and Spring Onions, breaking up the mince.

* Step 4

Before you add the sauce to the pan, mix it well again. Then pour in the sauce and bring it to the boil and let it thicken.

* Step 5

Add the drained Potato and gently mix and combine. Sprinkle with the saved Spring Onion and serve.

Dry soy meat products are available from many Asian grocery stores and they are quite cheap. The mince type dry soy meat is a good substitute of minced meat, and you can find more recipes on this website. This is another recipe to use it. Asian mushrooms such as shiitake can be a good addition to this dish.

Ingredient

1 tablespoon

oil for cooking

1 tablespoon

soy sauce

1 tablespoon

mirin

1 tablespoon

potato starch

1 teaspoon

sesame oil

1 tablespoon

dark colour miso

1 tablespoon

sugar

2 tablespoons

sake (rice wine)

1 teaspoon

sesame Oil

Cooking instructions

* Step 1

Soak dry soy meat in plenty of warm water for 30 minutes. Drain and squeeze to remove excess water, then soak in fresh water, drain and squeeze to remove excess water again. *Note: This process is to remove unpleasant smell from soy meat. It might be unnecessary, or you wish to repeat a few times.

* Step 2

Place the squeezed soy meat in a bowl. Combine the marinade ingredients in a smaller bowl, pour over the soy meat, and mix to combine well.

* Step 3

In the smaller bowl that you just used, combine the Sauce ingredients.

* Step 4

Heat oil and garlic in a large frying pan over medium heat. When aromatic, add spring onions and the marinated soy meat, and stir-fry for a few minutes.

* Step 5

Before you add the sauce mixture into the pan, mix it well again. Then pour in the sauce mixture and bring it to boil and stir until the sauce thickens.

* Step 6

Add tofu, gently mix and combine, and simmer until tofu is warm.

This sauce is good with Tofu, steamed Vegetables, Noodles, and of course with freshly cooked Rice. Minced Meat can be any kind of Meat. It is seasoned quite strongly as it is a sauce. Just pour it over whatever you want to eat with it.

Ingredient

1 tablespoon

Vegetable Oil

1/2 tablespoon

Dark Colour Miso

1/2 tablespoon

Sugar

1/2 tablespoon

Soy Sauce

1 tablespoon

Sake (Rice wine)

Cooking instructions

* Step 1

Combine all the sauce ingredients in a small bowl.

* Step 2

Heat Oil in a saucepan over medium heat, add Ginger and Garlic. When aromatic, add Mince Meat and Spring Onion.

* Step 3

When Minced Meat is cooked, add the sauce. Cook for a few minutes, then add Potato Starch (OR Corn Starch) mixture and stir until thickens.

* Step 4

Enjoy with Tofu, steamed Vegetables, Noodles or Rice. Today I served steamed Cauliflower with this sauce.

I often use my ‘Mabo Dofu’ miso sauce for seasoning stir-fried vegetables. I realised that the sauce goes very well with Tomatoes. I knew that Soy Sauce goes well with Tomatoes, but it was a surprise discovery. If you like my ‘Mabo Dofu (Tofu)’ and Tomatoes, this dish might become one of your favourite dishes.

Ingredient

1 tablespoon

Oil

1 pinch

Salt

2 tablespoons

Dark Colour Miso

2 tablespoons

Soy Sauce

2 tablespoons

Sugar

Cooking instructions

* Step 1

Place all the sauce ingredients in a bowl and mix well. This has to be done before you start cooking. Cooking process doesn’t take long at all.

* Step 2

Lightly whisk Eggs in a separate bowl, and season with a pinch of Salt. Heat Oil in a frying pan over medium-high heat. When the pan is hot, cook Eggs gently stirring until set but still soft. Transfer to a plate.

* Step 3

Cook Pork Mince with Garlic, Ginger and Spring Onions until Pork changes colour, then add the sauce and combine.

* Step 4

Add Tomatoes and cook for a few more minutes until Tomatoes started softening. Return the cooked egg and gently combine.

* Step 5

Half fill a bowl with freshly cooked rice and cover it with the pork and tomato mixture. Sprinkle saved chopped Spring Onion on top and serve.

5 . Mabo Eggplant

My Japanese style Mabo Dofu (Tofu) recipe is quite versatile and you can replace Tofu with vegetables such as eggplant. All eggplant lovers should try this dish! It is very easy to cook but you need patience to precook eggplant pieces until they are tender. If you are OK with the oil intake, you can deep fry the eggplant pieces. But I prefer cooking them in a frying pan, though I still need generous amount of oil.

Ingredient

250-300 g

Pork Mince

1 tablespoon

Dark Colour Miso

1 tablespoon

Soy Sauce

1 tablespoon

Sugar

2 tablespoons

Sake

1 tablespoon

Sesame Oil

1 tablespoon

Potato Starch

Cooking instructions

* Step 1

Cut off the green bit of Eggplants and cut in half or quarter lengthways, then cut diagonally into small pieces OR cut into 1.5 to 2cm thick pieces.

* Step 2

Heat 1 to 2 tablespoons of Oil in a frying pan and cook Eggplant pieces until tender. Repeat the process until all Eggplant pieces are cooked.

* Step 3

Place all the sauce ingredients in a mixing bowl and mix well.

* Step 4

Heat a frying pan or a wok, cook Pork Mince breaking up, add Garlic, Ginger and Spring Onions.

* Step 5

Mix the sauce mixture again, then pour it in and bring to a boil and let it thicken.

* Step 6

Add pre-cooked Eggplant and gently mix and combine.

* Step 7

Serve with freshly cooked rice.
