Here is another great dish for drinking. Of course it is great with freshly cooked rice, too. You can use Canned Soy Beans, but I like crunchy Edamame Beans better. The coating of Potato Starch is the key to the scrumptiousness. Do not omit it.

Ingredient

1 tablespoon

Soy Sauce

1 tablespoon

Sugar

1 teaspoon

Rice Vinegar

Cooking instructions

* Step 1

Combine all the sauce ingredients in a mixing bowl.

* Step 2

Sprinkle Potato Starch Flour over the thawed Edamame Beans and coat them well.

* Step 3

Heat a generous amount of Oil in a frying pan over medium heat, and cook Edamame until the coating turned white and crispy. *Note: Alternatively, you can deep-fry them.

* Step 4

*Note: If the amount of Oil is not enough, Beans would stick to each other. If that happens, keep cooking, tossing and shaking the pan, until Beans get separated and coating becomes white and crispy.

* Step 5

Use a skimmer or mesh ladle to transfer the fried Beans to the sauce and mix to combine.

These yummy Edamame beans are great for snack or side dish for alcoholic drinks. They can be mixed with freshly cooked Rice, or mixed with other vegetables such as Daikon or Cucumber to make a salad. Flavour can be anything you like. Today I add Wasabi and enjoyed them with chilled Sake.

Ingredient

2 tablespoons

Soy Sauce

Cooking instructions

* Step 1

Warm Edamame beans in boiling water or in the microwave. This process is optional, but it will help marinating process.

* Step 2

Combine Soy Sauce and flavour of your choice. Add Edamame and marinate for 1 to 2 hours.

* Step 3

*The marinated beans can be mixed with freshly cooked Rice

In Melbourne, a large variety of Tofu are now available as all major supermarket chains are selling their own brand Tofu products. This lunch (OR dinner) plate is perfect for everyone, especially on meat-free Mondays. Teriyaki Tofu & King Oyster Mushroom, Egg and Veggies are on freshly cooked rice. Such a delicious, filling and nutritious meal is not hard to prepare.

Ingredient

2 handfuls

Baby Spinach

2 tablespoons

Soy Sauce

1 tablespoon

Sugar

1 tablespoon

Mirin

Cooking instructions

* Step 1

In a small bowl, combine all the sauce ingredients.

* Step 2

Cook Eggs as you like. ‘Sunny Side Up’ or ‘Scrambled’ is quick and easy. After the eggs are cooked, use the hot frying pan to cook Spinach, then season with Salt & Pepper.

* Step 3

*Note: Use any vegetables you like for this dish. You may wish to cook sliced Carrot instead of Spinach.

* Step 4

Heat 1 tablespoon Oil in a frying pan, cook thickly sliced Tofu. You can cook King Oyster Mushrooms next to the Tofu as well. When they are golden, add the sauce, and cook until the sauce thickens.

* Step 5

Place Freshly Cooked Rice on a plate, then arrange Tofu, King Oyster Mushrooms, Egg, Spinach (OR vegetables of your choice) and Edamame. Sprinkle some Toasted Sesame Seeds over the Tofu, drizzle some Soy Sauce over the egg if you like, and enjoy!

Creamy Pasta With Broad Beans, Peas & Edamame

These beans & peas don’t need to be fresh ones. Using frozen beans & peas, you can cook this dish whenever you want to. I love Broad Beans. The very first version of this dish was made with Broad Beans only. But I started adding Peas and Edamame (Young Soy Beans) to make it look prettier. Then I added a secret ingredient, that has brought this dish to the next level.

Ingredient

1/2-1 teaspoon

Lemon Juice

1/2-1 teaspoon

Capers

1/4 cup

Broad Beans

2 tablespoons

Peas

Cooking instructions

* Step 1

Cook Pasta in boiling salted water following packet instructions. Drain and transfer to the sauce later.

* Step 2

In a separate sauce pan of boiling salted water, cook Beans and Peas. Drain and cool under cold water, then drain well. Peel Broad Beans and discard skins.

* Step 3

In a bowl, combine Cream Cheese, Avocado and Broad Beans, coarsely mash using a fork. Add Lemon Juice and Capers. Season with Salt & Pepper.

* Step 4

Add cooked Pasta and Peas & Edamame, save some for topping, and mix to combine. Sprinkle with saved Peas & Edamame, and chopped Parsley. Add extra Freshly Ground Pepper if you like and enjoy.

In Melbourne where I live, a greater variety of rice are becoming available even from the average supermarkets. Short, medium and long grain rice. Glutinous rice, Wild rice, Arborio, Basmati, Jasmine, Brown rice, White rice, Red rice and Black rice. I particularly love the black coloured rice such as Wild rice and Black rice. They have chewy texture and rich nutty flavour. And they are very good for health.

Ingredient

2 cups

Water

1 tablespoon

Toasted Sesame Seeds

2 tablespoons

Soy Sauce

2 tablespoons

Rice Vinegar

1 teaspoon

Sugar

1-2 teaspoons

Sesame Oil

Cooking instructions

* Step 1

Cook Black Rice according to the instruction on the package. I just cook 1 cup of Black Rice with 2 cups of water in the rice cooker.

* Step 2

Combine all the dressing ingredients in a bowl, add Edamame and Carrot to marinate for 30 minutes.

* Step 3

Drizzle the dressing with the Edamame and Carrot over the cooked warm rice, add Cucumber and mix to combine.

* Step 4

Sprinkle finely sliced Spring Onions and Toasted Sesame Seeds over and serve.
