Lamb shank can be just as tender as leg of lamb if marinaded before grilling. I rub a two pound shank with granulated garlic and soy sauce, no salt, then white pepper, then soak overnight in tomato juice. While the shank is on the grill, I cook quartered potatoes and green pepper slices, onion slices, celery slices and carrot slices in the leftover marinade. I save the marinade to make tomato soup with the leftover bone from the shank by simmering an hour. Bones will be soft enough to go to the dog.

* Step 1

Perforate lamb shank skin every 1” with small knife. Rub shank with olive oil, garlic powder, soy sauce and white pepper. Dry 15 minutes in deep baking dish. Cover with tomato juice. Add water till immersed. Marinade overnight, wipe dry, rub again with olive oil.

Slow cook shank two or more hours, away from hot coals on covered grill. Poke with fork to see if juice runs clear. Once clear, finish over hot coals for color, three minutes each side. Rest on cutting board. Debone by butterflying the meat along the bone. Carve. Put bones in marinade to make soup.

While grilling, simmer potatoes, onions, celery, carrot and green peppers in tomato marinade in the deep baking dish in the oven, stir occasionally.

Serve vegetables and carved lamb family style, save marinade. Add the deboned shankbones to the cooked marinade, add 4 chicken bouillion cubes, simmer one hour in oven to make soup, taste. Bone goes to the dog, soup freezes well.

By making a fresh puree from this specially prepared ground beef sauce, we make a beef bolognese sauce from scratch in half an hour instead of the several hours it takes traditionally. Delicious with fusilli pastas.

Make the soffrito: shave celery stalk, carrot, and shallot, immerse in white wine, microwave 2 minutes.

Puree soffrito in food processor. Thaw tomato sauce.

Glaze minced garlic in Tbs olive oil in skillet, add ground beef, crumble with fork till browned. Deglaze skillet with boiled milk with beef bouillion cube till evaporated.

Add sofrito puree to meat in skillet, deglaze meat again till evaporated. Add 2 cups tomato sauce to skillet. Bring to boil. Cool down with 2 more cups of tomato sauce. Pour bolognese sauce in food processor, puree, pour back in skillet. Heat beef bolognese sauce till thick.

Add 4 cups fusilli pasta, I boiled 2 storebought fusilli pastas 9 minutes, added with the 2 soft fresh fusilli pastas to bolognese sauce. Heat, simmer till fusilli tastes al dente. Taste sauce, add aleppo red pepper, maldon flaked seasalt and Tbs olive oil, stir.

Sprinkle shaved parmesan cheese on top, add chopped fresh basil, serve. Enjoy.

Firm tofu absorbs tandoori marinade like chicken and cooks moist and tender on a bamboo skewer in the air fryer. Turn golden in the tandoori hardwood smoke. Served with french fries and sides of peas and cauliflower in panang curry sauce.

* Step 1

Make the marinade. Fry fresh spices first in peanut oil, then add dry spices, roast till fragrant. Add thick greek yoghurt, stir. Add 1/2 Tsp turmeric dissolved in Tbs lime juice, stir into marinade for color.

Marinade the tofu on the skewers, half hour. Smoke and grill half hour in air fryer Clarify 2 Tbs unsalted butter (ghee) so it does not splatter, heat hardwood pellets with clarified butter, light 2 minutes, blow out flame, place inside air fryer oven to produce smoke, preheat to 400F degrees.

Steam the peas and cauliflower florets in dutch oven with lid till al dente, stir into the panang sauce, set aside, keep warm.

Reconstitute organic coconut milk from dry shredded coconut flesh. When the shredded coconut flesh has softened, run milk through food processor till creamy and smooth. Add panang curry paste to coconut milk and make panang sauce. Mix with vegetables.

Cut the yukon potato in 1/2” strips, skin on. While the oil heats, soak fries in water to remove starch, drip dry. Heat oil to 350F. Fry the french fries 5 minutes. Lift out of oil, raise temperature to 375 F, crisp 2 minutes, drain oil off. Serve. Cool oil, filter the oil for reuse with funnel.

Grill smoke the marinaded tofu and olive skewers. Grill smoke 30 minutes, fingertest tofu for juicyness, finished when color is golden.

Serve tofu and olive skewers with french fries, panang curry cauliflower and panang curry peas in coconut milk on the side. Enjoy.

Aqua Faba means bean water and is the nourishing thick broth from soaking and cooking dried garbanzo and other beans. It is often thrown away because the foam on top has a bitter taste. We skim the bitter foam off and use the broth, it tastes mild like egg whites in egg drop soups. There is also a fava bean called Aqua Dulce, which is not bitter when soaked and cooked, that can be used with or instead of garbanzo beans. We mixed both beans to make a hearty bean soup dinner served over croutons with poached egg yokes, spiced with harissa sauce and other spices, served with side dishes of pickled cucumber, pickled onions, pickled olives, pickles sweet peppers and chopped cilantro and green onions. If you prefer vegan, you whisk the aqua faba broth till it develops white strings, like eggwhites, use in this soup instead of eggs.

* Step 1

Soak 1/2 cup dried garbanzo beans overnight and 1/2 cup favabeans in 4 cups of water. Next morning, add 2 cups water to submerge beans, bring beans to boil.

Boil half an hour on high. Add two more cups of water. Bring back to boil, skim, then on low, skim every half hour till no more foam develops. Pour skimmed cloudy aqua faba in bowl and whisk.

Mix cumin, garlic, caraway, harissa, salt in food processor with aqua faba, whisk, then add to the beans. Simmer till done. Beans are done when beans feel soft. About an hour.

When done, turn heat off. Make indentations in beans in broth to place crackoed eggs for poaching, poach 5-10 minutes, ready when egg whites are solid.

Put half a cup of croutons in soup bowl, beans on top, egg yoke on top, pour broth over, serve with side dishes and wedges of lime. Nutritious, big, filling dinner.

Make cuts in potato skins and hotdog skins or they will explode in the microwave. Cook potatoes 2 minutes, add frozen hotdogs, cook 2 minutes. Meanwhile, chop red onion, slice tomato, chop green onion. Split cooked potatoes in half, put hot dog on top with green onions and red onions, drizzle mustard, mayo or salad dressing over, pepper and salt. Serve, enjoy.
