The restaraunt I'm currently head chef at is focused on bush foods and I like to incorporate all of this type of ingredients in my cooking. Here is a unique and super simple tasty entree, the flavours take you back to the caveman days cooking with fire but elegant.

Ingredient

Cooking instructions

* Step 1

Preheat oven to 180c

* Step 2

Place paperbark on a tray and on another tray place crocodile, making sure to flatten out to similar sizes.

* Step 3

Wash and slice beetroot into smaller sizes and place onto tray, oil and seasoning.

* Step 4

Place paperbark in oven and crocodile, set fire to paperbark and shut oven.

* Step 5

After 15 mins pull out paperbark and crocodile (check the croc is cooked through if not get back in for another 5mins) and let cool. Discard paperbark. After further 10 mins check the beetroots.

* Step 6

Once soft and roasted, place into robocoupe and blitz adding half wattleseed and splash oil and seasoning. Stop once smooth. Slice croc.

* Step 7

Place onto plate, place dots of aioli,splashes of beetroot puree and wattleseed and garnish with raw spring onion and micro herb.

* Step 1

Pat dry your steak, rub with garlic powder, salt, black pepper

Preheat a skillet with canola oil and/or Wagyu Beef Tallow

* Step 3

Drop your hot sausages and steak, cook 2minutes each side for sear on your steak. Plate and enjoy! (Cook longer if desired)

* Step 1

Toast bread and after that use the half garlic clove and rub it on the bread while it is still warm.

* Step 2

Fine chop tomato. Mix it with both halves of garlic clove (fine chopped/crushed), chopped basil leaves, olive oil and balsamic vinegar. Add salt and pepper to taste.

* Step 3

Spread the topping on the toasted bread and serve.

* Step 1

Add teaspoon of sea salt and tablespoon of grape seed oil to a pot of spring water over medium heat.

* Step 2

Add spaghetti when boiling and stir

* Step 3

Sauté chopped veggies: onions, peppers and mushrooms, zucchini and yellow squash (season to taste)

* Step 4

Blend tomatoes agave and cilantro in blender and add to saucepan of veggies. Let simmer and cook for 15-20 min. Enjoy!

* Step 1

Blend chickpeas with 1/4 cup of water and teaspoon of salt

* Step 2

Sauté onions and peppers in lightly coated pan and add 1/4 cup of spelt flour. Stir until brown and pasty. Add more spelt flour if needed until it is a pasty brown substance.

* Step 3

Add 1/4 cupof spring water and stir to mix over medium heat. Continue to stir and add water until it meets the preferred gravy consistency.

* Step 4

Add mushrooms and seasonings to sauté and cook. ( Entree - kale greens, vegetable salad with sliced avocados, mashed garbanzo beans with mushroom gravy and chapati flat bread made out of spelt flour. Tasty!
