In a large skillet, medium heat add the onions and peppers and cook for about a minute. Then add the steak and seasoning. Once it is cooked take a paper towel and dip in greases to get some of the fat out. Or drain

On a griddle, over about 250 heat spray the pan and add one tortilla. Top with cheese then meat mixture. Top with some more cheese and add tortilla to top. After about 2 minutes flip.

Once burritos are done cut each in half for six servings or keep whole for three servings. I served mine with rice and beans. Some people enjoy them with sour cream.

* Step 1

Start by peeling and washing your shrimp thoroughly! Add the egg, mustard and Louisiana sauce and mix your shrimp thoroughly! Marinate for 30 minutes.

Mix all your dry seasoning ingredients in a Tupperware with lid or ziplock bag. Mix it thoroughly. Heat up your oil.

Dip your shrimp in batches in your flour mixture. Mix thoroughly by shaking your Tupperware or ziplock bag several times. Add it to the hot oil and do the same for the remaining shrimp.

Strain your cooked shrimp in a strainer and let it cool a bit before transferring it to your serving plate.

Prepare your sauce by mixing all the ingredients in a separate bowl.

In the air fryer oven. Safe, quick and convenient. For the smoke, I used loose tea and hardwood pellets in a metal cup on lower rack of my air fryer oven. Shallots are a tea smoked delicacy, taste great warm or cold. Mild when smoked whole, pungent when smoked in slices. I smoke the shallots whole, then slice and microwave a minute to bring out the sweetness. I smoke them with the whole chicken livers on the same tray on upper rack. Pair with pickled green mangos in pepper oil. Make great weekend snacks.

Turn oven to broil, 450F degrees. Place metal cup with tablespoon of hardwood chips on lower rack, butter on top. When butter has melted, light with match. When smoking starts, blow out the flame, sprinkle tablespoon of tea on top. My Tea Smoke started under 10 minutes.

Rub chicken livers with flaked seasalt. Peel shallots, leave whole. Place both in upper oven on grilling rack to impart tea smoke flavor. Poke with fork for tenderness and check for smoke color. Done in 18 minutes in this air fryer oven. Take shallots, slice, microwave shallot slices one minute to bring out the sweetness.

Arrange chicken livers in center, garnish with tea smoked shallots and oil peppered green mangos. Serve with toothpick. Enjoy.

soy sauce

Rice Wine

garlic

ginger

* Step 1

Wash the chicken thoroughly and cut the chicken in bite size pieces.

Prepare your marinade by combining all the ingredients together except for the potato starch.

Pour marinade all over chicken and for best result let it marinate overnight.

Heat up your oil and deep fry the chicken in batches until it is golden brown and crispy. Strain it to let excess oil out.

Transfer to a serving plate and sprinkle with 5 spice and white pepper. Serve and enjoy!

Place mayo & sour cream in a jar, stir. Place all seasonings in jar and stir, you can also place lid on & give it a big shake. Taste to see if you want to add more chili powder. Great on tacos, quesadillas, or even a great French fry dipping sauce.
