Mashed Pumpkin Salad with Nuts
#immunebooster [Theme: Kekacang] The texture of the salad is similar to Japanese mashed potato salad but I added nuts and dried fruits. This recipe is a twisted version of what my aunt has cooked me before(My aunt was adding sour cream too but I didn't have it today).
Cooking instructions
* Step 1
Cut the pumpkin into small pieces and place them on heat resistant plate. Cover it with a cling film and heat in a microwave for 3-4minutes(600w). Peel the pumpkin skin with knife and put the rest into a bowl.
* Step 2
Put all nuts and dried fruits in a plastic bag. Crush them by hitting it with a wooden stick.
* Step 3
Mash the pumpkin and add cream cheese, nuts, and dried fruits. Mix them well and finish! It becomes tastier when you cool them in the fridge before eating.
